Talk about delicious and NUTRITIOUS 🌱
I attended ButterTrail Naturals sip and sit winter wellness chat yesterday (topic was immune boosting foods). We learned about supporting our bodies in the winter months with dark coloured foods, warm liquids, and slow cooking meals. We even got to try a delicious beet salad which sparked the need for a quick stop at foodland on my way home!
(Serves 4)
Boil 16 small beets (30min approx. until fork tender)
1/2 red onion chopped
4 kale bunches chopped
2Tbsp everything but the bagel seasoning
2Tbsp olive oil
2-4 Tbsp Balsamic vinegar (or more!)
Topped worh pumpkin/sunflower seed topper from costco!
(Optional: crumbled feta- but it doesn’t even need any extra flavour wow)
Kim shared the recipe using everything bagel seasoning, a genius way to get black sesame seeds and some garlic and salt into the dish easily! And what a body booster to eat beets in such a delicious way!
Beets are nutrient rich, liver supporting, and blood pressure lowering to name a few benefits! The Kale, a dark leafy green also high in nutrients like Vit. C (important in immunity), vit. E, and Calcium.
