Thai Basil Beef Bowl Recipe 🍃

Ingredients:
- 1 14 oz can coconut milk
- 3/4 cup jasmine rice
- Sea salt, to taste
- 1 tbsp olive oil
- 4 cloves garlic, chopped
- 1 k**b ginger, chopped
- 1 lb ground beef
- 1/4 cup tamari
- 1 tbsp coconut sugar
- 1 cup loosely packed fresh basil leaves
- For serving: sesame seeds and lime wedges
Directions:
1. In a medium saucepan, combine jasmine rice, coconut milk, 3/4 cup water, and a pinch of sea salt. Bring to a boil, reduce heat, and simmer for about 25 minutes until the rice is tender and creamy.
2. While the rice cooks, heat olive oil in a skillet over medium heat. Add chopped garlic and ginger, cooking for about 2 minutes until fragrant but not burnt.
3. Add ground beef to the skillet and cook until browned, approximately 5 minutes.
4. Stir in tamari and coconut sugar, and let the mixture simmer on low for another 15 minutes.
5. Mix in half of the fresh basil leaves.
6. Serve the savory beef over coconut rice and garnish with the remaining basil leaves, sesame seeds, and lime wedges.
