Growing up, the harsh words of bullies coupled with a constant “dieting” society and the need to “look” a certain way really shifted how I felt about myself and how I looked. In high school I developed an eating disorder – something I felt I could finally control. And though not even about food (the eating disorder – in most cases), this was the act of doing something (I suffered silently with Bulimia Nervosa) when feelings and emotions brought me to a point and situation where I felt out of touch with myself – nervous and anxious, or out of control – and resulted in my binging and purging activities. Though it is something I am not proud of, I have realized over the years that my going through this has helped in shaping and shifting me into the person I am today and more so, share my story with others and help them get to a point where they are absolutely in love with who they are – their value and worth in this world.

Same recipe. Different pan. Different snack outlook!
I flipped my sugar free banana muffin recipe into a donut pan this past weekend and they just made for a whole new snack!
Most muffin recipes can be easily made into donut pans. You’ll want to spray the pan to prevent sticking and pay close attention to baking time (often less time is required), but makes for a game changer when presented with a snack this way!

What do you see? Bok Choy/ pak-Choi edition! Swipe to play! ➡️
I vow to include foods that I want in my diet this year…..even if it means I’m the only one who enjoys them….this way anyways. My eldest and husband enjoy bok choy in my Sweet and Spicy Asian Noodle Soup on my website! So next time I’ll make it that way!

If your goal this year is to include more plant based meals into your repertoire…..well, make sure to save this! Pasta Fagioli!! I have been hearing little whispers tell me to include more plant based meals and this one did not disappoint!
A classic comfort dish with so much flavour, I know you and your families are going to love it!
Ingredients:
•2 Tbsp Olive Oil
•1 shallot, minced
•2 carrots, finely diced
•2 celery ribs (stalks), finely diced
•1 Cup vegetable broth
•1 Cup tomato sauce
• 2 can mixed beans (I used the 6 bean medley)
•small piece of Parmesan’s cheese rind
• 1 cup of your favourite small pasta (I used the small shells), cooked separately and added once al dente

Directions:
1. Add the olive oil to a low saucepan over medium heat. Add the shallot, carrots, celery and sauté for 5-7 minutes.
2. Add the broth, and tomatoes sauce and bring to a boil.
3. Once at a boil, lower heat to simmer and add the beans. Simmer for up to 15 minutes. Add in the Parmesan cheese rind here too.
4. Meanwhile, cook the pasta separately in a pot of salted boiling water. Once cooked al dente, quickly drain and add to the bean mixture.
5. Simmer on low for at least 3-5 minutes to allow the flavours to immerse into the pasta.
6. Serve hot and top with freshly grated Parmesan cheese if you’d like! And some crispy bread!

As we head into the last week of 2025….yes, it’s Monday today friends, a little reminder I was given at the beginning of the month I want to share with you 🙏
We hold tension in so many areas of our bodies…..at different times of days…..but SO much while we’re scrolling…..so take these 25 seconds and let yourself relax and ease up on the tension…..and visit this whenever you need to release some more.
