Lunch sorted in 15 minutes: no excuses needed. 🥗

This Super Simple Paleo Tuna Salad is one of those recipes I keep coming back to because it's fast, filling, and actually satisfying. We're talking mixed greens, creamy avocado, crunchy walnuts, cherry tomatoes, cucumber, and flaked tuna all tossed in a simple balsamic Dijon dressing. 

High in healthy fats and protein, it keeps you full from lunch all the way to dinner; no 3pm crash, no snack raids. 🙌 It also travels really well, so it's perfect for picnics or packed lunches. Just store the dressing separately and add it right before eating.

This sheet pan balsamic chicken with roasted potatoes, asparagus & burst cherry tomatoes is about to become your new weeknight hero. The trick? Mix up the marinade the night before, and by the time you get home from work, dinner basically makes itself. Throw it in the oven and actually relax for once.

🍓🍌 Dessert for breakfast? Yes, absolutely, and I will not apologize for it. This Strawberry Banana Chia Pudding tastes indulgent but is secretly one of the most nourishing ways to start your day.

The texture is like a creamy tapioca pudding, naturally sweetened with juicy strawberries and banana, and it comes together with just 5 minutes of prep. Mix your chia seeds and almond milk the night before, pop it in the fridge, and wake up to breakfast already done.

But let's talk about what's actually happening nutrition-wise, because chia seeds are seriously impressive. They're loaded with fibre to keep digestion happy and moving, omega-3 fatty acids for brain health, and plant-based protein to keep you full and energized all morning long. This is the kind of breakfast that actually carries you through to lunch without the mid-morning crash.

It's also totally customizable; swap in blueberries, kiwi, or whatever fruit you love. Add some nuts or seeds on top for extra crunch. Make it your own! 🐦 These Chocolate Coconut Easter Nests might just be the cutest, and easiest Easter treat you'll make this season!

Just 5 ingredients, no baking required, and they come together in literally 5 minutes of hands-on time. We're talking shredded coconut, raw cacao powder, coconut oil, honey, and organic jelly beans nestled on top. That's it! The coconut oil works its magic in the freezer and binds everything into the most perfect fudgy little nests.

And here's the best part: these are actually GOOD for you. Coconut is packed with fibre to support healthy digestion and stable blood sugar, healthy fats that support your immune system, and medium-chain triglycerides for sustained energy. So when the kids (or you 😄) reach for a second one, no guilt needed!

They are gluten-free, nut-free, and dairy-free, which makes them a great option for Easter gatherings where you want everyone to be able to indulge. I even made these on Global TV and they were a hit!

🐣 If you love a classic peanut butter egg but want something everyone can enjoy, these Chocolate Sunflower Butter Eggs are about to become your new Easter obsession!

I created this recipe as a nut-free alternative to one of my all-time favourite Easter treats... and honestly, I think it might be even better than the original.

The filling is made with creamy sunflower seed butter, maple syrup, and a little coconut flour to hold it all together. But here's the secret ingredient that takes them to the next level: puffed quinoa! It adds the most amazing crunch to the creamy filling, and then the whole thing gets dipped in dark chocolate. Yes please.

These are nut-free, vegan, gluten-free and dairy-free - so they're a treat the whole family (and all the guests with dietary restrictions) can actually enjoy. They make 30 bite-sized eggs, so they're perfect for filling Easter baskets, bringing to a gathering, or just keeping stocked in the freezer for when the chocolate craving hits.

They come together in about 20 minutes of hands-on time, and honestly the hardest part is waiting for them to set.

🐣Introducing your new Easter tradition: Almond Crispy Rice Easter Eggs!

These little guys are made with whole food ingredients, taste absolutely delicious, and are so much better for you than the usual Easter candy haul.

We're talking almond butter, maple syrup, coconut oil, and brown rice crispy cereal all mixed together, shaped into eggs, and topped with melted chocolate and naturally coloured sprinkles. They're gluten-free and vegan... basically everything you want in a festive treat.

If you're short on time or don't feel like shaping eggs, you can also just press the whole mixture into a baking dish and drizzle chocolate over the top. No judgment here!
These come together in about 10 minutes of hands-on time and are perfect for making with little ones this weekend.
