🍑This Summer Pea Peach Salad is bursting with bright summer flavours. Peaches make a delicious sweet treat, but they’re also incredible also taste delicious in savoury dishes like this pea peach salad. 

The sweet and  juicy peaches pair really well with fresh summer sweet peas, creamy avocado, and crunchy sunflower seeds. Sometimes it can be hard to find sweet peas in a pod, so you can always use frozen peas that have been gently cooked 😍

Salad Ingredients:
✅ 5oz mixed greens
✅ 2 diced ripe peaches
✅ 2 cups of fresh sweet peas, pods removed
✅ 1 avocado, diced
✅ 1 cup sunflower seeds

Dressing Ingredients:
✅ 1/4 minced shallot (2 teaspoons)
✅ 1/4 cup apple cider vinegar
✅ 1 tablespoon honey
✅ 1/2 teaspoon Dijon mustard
✅ 1/2 cup olive oil
✅ Salt and fresh ground black pepper
Directions
1️⃣ Mix dressing ingredients together in a jar or blender. Set aside until ready to use, or store sealed in the refrigerator for up to 1 week.
2️⃣To make the salad, in a large bowl, combine the mixed greens, peaches, sweet peas, avocado, and sunflower seeds.
3️⃣Drizzle about 1/2 cup of the vinaigrette into the bowl and toss the salad gently but thoroughly to combine, then serve immediately.

Dairy-Free Strawberry Shortcake Recipe

Bringing back childhood memories with a dairy-free twist! Dive into the goodness of our Dairy-Free Strawberry Shortcake, perfect for those summer gatherings!

Ingredients:
🍓4 cups strawberries, quartered
🍓½ cup coconut sugar, divided
🍓¼ cup coconut milk (room temperature)
🍓½ cup coconut oil, melted
🍓1 egg (room temperature)
🍓½ tsp vanilla extract
🍓2¾ cups spelt flour, divided
🍓2 tsp baking powder
🍓¼ tsp baking soda
🍓½ tsp cinnamon
🍓½ tsp cardamom
🍓½ tsp salt
🍓1 14-oz can full-fat coconut cream
🍓½ cup icing sugar
🍓1 tbsp tapioca flour

Directions:
1️⃣Chill the can of coconut milk overnight. Preheat oven to 350F.
2️⃣Mix strawberries and ¼ cup sugar; set aside. Line a baking sheet.
3️⃣Whisk nut milk, coconut oil, egg, vanilla. Mix ¼ cup sugar, 2½ cups flour, baking powder, soda, spices, and salt.
4️⃣Combine wet and dry ingredients, rest in the fridge. Roll dough, cut circles, and bake biscuits.
5️⃣Whip coconut cream, tapioca flour, powdered sugar. Store in fridge.
6️⃣Assemble shortcakes: biscuit, strawberries, cream, repeat layers.

Transform your breakfast routine with my Four-Ingredient Strawberry Chia Jam! 🍓

This homemade twist to a breakfast staple adds a burst of fresh strawberry flavour and the goodness of chia seeds to your morning toast or yogurt bowl.

Ingredients:
⚫2 Tbsp chia seeds
🍓2 cups strawberries
🍋½ tbsp lemon juice
🍯½ tbsp honey or more to taste (optional)

Directions:
✅Place chia seeds in a small food processor and blend until they become a powder. Set aside.
✅In the same food processor, blend strawberries, lemon juice, and honey until smooth (honey is optional and can be adjusted based on the sweetness of strawberries).
✅Add powdered chia seeds to the strawberry mixture and pulse until mixed.
✅Spoon the jam into a Mason jar and refrigerate for 30 minutes to set.

🍊🥥 Summer Snacking: Dairy-Free Creamsicle Coconut Truffles 🥥🍊

Indulge in a creamy and sweet summer treat with these Dairy-Free Creamsicle Coconut Truffles! These delightful balls of vanilla and orange goodness will have you coming back for more. If you loved Creamsicle ice cream bars as a kid (or still do as an adult!), you'll adore these truffles.

Ingredients:
✅2 cups unsweetened shredded coconut, divided
✅1 Tbsp white chia seeds
✅2 tsp melted coconut oil
✅3 Tbsp honey
✅4 Tbsp orange juice
✅1 Tbsp orange zest
✅1/2 tsp vanilla extract
✅1/8 tsp sea salt

Directions:
1️⃣Blend 1 cup of shredded coconut and chia seeds in a food processor until powdered.
2️⃣Add coconut oil, honey, orange juice, zest, vanilla, and salt. Process until well combined.
3️⃣Add remaining shredded coconut and pulse until combined.
4️⃣Shape into 12 balls and freeze for at least an hour to set.
5️⃣Store in the fridge or freezer and enjoy cold or at room temperature.

Nothing beats a weekend at the cottage, and my go-to dish for those outdoor escapes is this Slimmed-down Caesar Salad.

With a few simple steps, you can whip up this salad in no time, leaving you more moments to relax by the lake or enjoy a cozy evening around the fire pit. It puts a nutritious spin on the classic Caesar, swapping out traditional ingredients for healthier alternatives like homemade sprouted croutons and nutritional yeast or optional parmesan cheese substitute.

Ready to dive into this deliciousness? Here's the recipe. 🥬

Salad Ingredients:
✔️1 big head of romaine lettuce, chopped or torn into bite-size pieces
✔️4 Tbsp nutritional yeast (optional parmesan cheese substitute)

Homemade Sprouted Croutons:
✔️2 cups sprouted bread, cut into 1cm squares
✔️3 Tbsp grapeseed oil
✔️1 tsp sea salt
✔️½ tsp garlic powder

Caesar Dressing Ingredients:
✔️1 garlic clove, minced
✔️2 Tbsp fresh lemon juice (roughly half a lemon)
✔️1 egg
✔️3/4 tsp Dijon mustard
✔️½ tsp black pepper
✔️¼ tsp salt
✔️¼ tsp hot sauce
✔️¼ cup extra virgin olive oil

Directions:
1️⃣Make homemade sprouted croutons by tossing bread cubes in grapeseed oil, garlic powder, and salt. Sauté until golden brown.
2️⃣Whisk together garlic, lemon juice, egg, Dijon mustard, hot sauce, pepper, salt, and olive oil to make Caesar dressing.
3️⃣Assemble the Slimmed-down Caesar Salad by tossing lettuce with dressing. Top with homemade sprouted croutons and nutritional yeast.
