This easy potato recipe comes with choices of eating cold to hot and from perogy to dill herb flavour. This dish can be eaten right away or prepared ahead of time – two to three days. It is kiddo friendly as well as a soft food. And yes, you can freeze this dish and heat it up at a later time (do not freeze in metal containers).
You will benefit from eating potatoes as they contain the following: Proteins 3-4 gms per medium potato, Complex carbs, Dietary Fiber, Vitamin C & B6, Minerals, Potassium (more than a banana), Magnesium, Iron, Phosphorous, Zinc and Copper, There are antioxidants, carotenoids, and resistant starch.
