We invite you into this season with some hands-on, collaborative learning about unfiltered Japanese sake led by Koji Advisor Kanayo Satoh!
Workshop Description
In this workshop, we will cover the following topics:
* What is Doburoku?: An introduction to doburoku and its key ingredients.
* The brewing process of sake: Learn how fermentation creates alcohol.
* History of Doburoku: Discover the unique history of Japanese sake.
* Let’s Make Doburoku!: A hands-on session where participants will make their own unfiltered sake! (Yields approximately one 720ml bottle)
* Tasting: Try the ready-to-drink doburoku, which Kanayo. koji.labo made.
* Exploring Flavoured Doburoku Variations: Get inspired by different ideas of flavours for future brewing.
* How to Use Sake Lees: Explore creative ways to use the byproduct from Doburoku Making
This workshop includes sake lees–inspired snacks and small bites, along with a special take-home gift, and an opportunity to connect with fellow participants. It also includes a pressing bag for straining after fermentation. Wishing you a wonderful time and experience!
