Sweet potato “crust” (just sweet potato mashed w Parmesan - not remotely crust like in the pastry sense but it works if you like mash)
Spinach, mushrooms, onions

Topped egg mix of eggs (6 for full recipe) 100g shredded aged cheddar, parsley, seasonings (I used Urfa and chili in the egg mix and garlic when I sautéed mushrooms and onions) salt and pepper throughout.

Stew rhubarb with sweet fruits like mango, berries, kiwi and use it as a topper for cereal or yogurt! One of my staple breakfasts is all bran cereal + high protein milk + kefir + berries - adding stewed rhubarb is a special summer treat !!

Burger night tip: Want to keep things a bit more balanced? Make a quick salad at home to have alongside your takeout. Skip ordering fries, just steal a few from your partner (they’ll survive 😉).

If you’re in Toronto, is a must-try—and yes, the banana pudding is worth it. But honestly? Dessert right after a burger might leave you feeling a bit blah. Save it for the next morning! Pair it with some fresh fruit for an indulgent, feel good weekend breakfast. Balance isn’t about missing out ….. just spreading out the fun. Not only do I love to support local farmers but I also I also the element of surprise in my weekly bag.

This week I was introduced to Kihirabi and I am already obsessed - the inner bulb is like a juicy radish texture with a broccoli flavour - wild!

Not wanting to waste (and because the urban farm insert said they were edible) I used the leaves to make pesto with my left over garlic scapes from the week before - literally the best pesto ever !!!

Handful of garlic scapes
Kohirabi leaves
Walnuts
EVOO
Parmesan
Salt and pepper

Truely amazing ! A bolder version compared to basil pine nut pestos - the garlic scapes Kohirabi version packs a serious flavour punch - I highly recommend

For anyone following along last week I posted a terrible salad nicoise I had in a trendy Toronto eatery …. I am even more disappointed with that salad knowing how easy and delicious a Niçoise salad is to make …. I threw this together in under 30 mins … and most of that time was boiling the potatoes….

🥚Hard-boiled egg
🐟 Flaked tuna
🥔 Baby potatoes
🥬 Kale & cabbage slaw
🧅 Pickled red onion
🍅 Grape tomatoes
🥒 Crunchy cucumber
🫒 Kalamata olives

All tossed in a dressing of:
🍋 Lemon juice
🥄 Grainy mustard
🍯 Honey
🫒 Extra virgin olive oil
🧂 Sea salt & black pepper

This bowl is a total win—balanced in protein, fibre, and healthy fats, with just enough carbs to keep you fueled. It’s simple, satisfying, and endlessly adaptable.

New obsession- celery apple dill slaw

2 cups chopped celery
1 large apple cut into match sticks (mandolin is your friend here)
1/2 cup finely sliced red onion (again mandolin)

Dressing - here is where my obsession begins
1 cup grated Parmesan
1/2 large Bundle of fresh dill finely chopped
1/4 cup Greek yogurt
1/4 cup mayonnaise
1 tablespoon minced garlic
Generous salt and pepper
Drizzle maple syrup
1/4 cup olive oil

Start by mixing the dressing ingredients in a large bowl - add in remaining ingredients- eat on its own top and open faced sandwich (I paired it with smoked salmon) serve it as a side to chicken pork or fish

Seriously it is friggin delicious! Let me know if you try it !! Chickpeas would be a great addition - I was planning to add them but couldn’t find my can opener 😬

Sushi Salad Jars (or bowls) one of my all time favourite meal prep meals!

Use any mix of veggies you have on hand edamame is a great addition for an extra protein boost!

Add fresh cilantro 🌿 for extra flavour
Add siracha to the dressing for a little spice
