One of the healthiest and yummiest breakfast/snacks ever!! High in protein and healthy fats. SO good for you! And delicious.
Ingredients:
Whole avocado
Eggs
Cayenne pepper (or any spice of your choice)
Cheese (optional)

Remove the pit from an avocado. Scoop out a little more avocado to increase the size of the pit's crater. Crack an egg into the crater. Sprinkle with Cayenne pepper (cheese too if you desire). Bake in the oven at 180 degrees until egg is cooked to the level you like.

These are an awesome way to get your healthy fats in! I eat them with a splash of hot sauce & Pink Himalayan Sea Salt. Actually, I have to be honest! It’s not a splash of hot sauce, it’s more like smothered! 😂😂😂 I’m a hot sauce kind of a girl! 💃🏻💃🏻💃🏻

Great for those doing Low Carb Diets

BREADLESS BLT SANDWICH
2 slices Deluxe American cheese
1 tablespoon mayonnaise
1/2 ounce lettuce
2 slices cooked bacon
1 1/2-2 ounces sliced tomato

One at a time, make two cheese crisps, keeping the cheese slices whole. It will take about 30-60 seconds in the microwave per crisp depending on your microwave. Try to get them quite brown without letting them burn. Remove them from the parchment paper and let them cool. Spread the bottom sides of the crisps with mayonnaise then top one crisp with the lettuce, bacon and tomato. Place the second cheese crisp on top to create a sandwich.

Makes 1 serving

Per Serving: 407 Calories; 35g Fat; 19g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs

Ingredients
4 ounces monterey jack pepper cheese
4 boneless skinless, chicken breast halves
2 teaspoons taco seasoning
2 tablespoons oil
Directions
Cut cheese into two 2 1/4 in 1 inch x 3/4 inch strips.
Flatten chicken to 1/4 inch thickness.
Place a strip of cheese down the center of each chicken breast half.
Fold chicken over cheese and secure with toothpicks.
Rub seasoning over chicken.
In a large skillet, brown chicken in oil on all sides.
Transfer to a 8 inch square baking dish, and bake uncovered at 350 degrees for 25-30 minutes or until the meat is no longer pink.
Discard toothpicks.

Beef Tenderloin Steaks With Creole Spice Rub

This recipe is from Cooking Light magazine. It is also good on chicken breasts, shrimp, or pork tenderloin. Cover the steaks with rub before you freeze them in for a make-ahead meal. When they are thawed they are ready to go straight to the grill.

INGREDIENTS
4 (4 ounce) beef tenderloin steaks, trimmed (1 inch thick)

Creole Spice Rub

1 teaspoon dry mustard
1 teaspoon garlic powder
1 teaspoon sage
1 teaspoon dried thyme
3⁄4 teaspoon salt
1⁄2 teaspoon cumin
1⁄2 teaspoon ground red pepper
1⁄2 teaspoon freshly ground black pepper

DIRECTIONS

Combine rub ingredients. Rub evenly over steaks.
Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add steaks to pan; cook 4 minutes on each or until desired degree of doneness. Remove from heat and let stand 5 minutes.
