Preparing for Maple in the County!

The local paper said to stop in at the big maple syrup operations outside the township on the March 23-24 weekend, but don’t forget about the little one(s) in the township. I do believe I am one of the oldest producers left since Mr. Miller is no longer with us. The difference between Mr. Miller and myself is that he used an evaporator and I do it the old fashion way with a pan like my ancestors. My parents didn’t use a pan but a cauldron. We never had an evaporator so as a child growing up, you learn to use what you had.

From the long range forecast the sap is still going to linger around for awhile. My plan is to always start in the middle of February and go to Easter, but sometimes it is shorter or longer depending on the weather. Because I don’t have a big suction pump to pull the liquid from the trees, I let Mother Nature take her course in helping my production. Sometimes she is rewarding and sometimes not. It is really rewarding trekking through the trees on a sunny day, smelling spring coming and listening to the birds coming back.

My mother, a great cook, used maple syrup instead of sugar when sugar was hard to get. Today it is hard to believe that sugar was a rare commodity. Everything in Canada is readily available.

I make the maple syrup during March and use it to make cookies, pies, etc. Orders are always taken. Either stop by the farm or email farm@loyalistjams.ca Help is always welcome when doing maple syrup!

Hello from Banff.

Decided to visit my daughter in Airdrie and come to Banff and Lake Louise for the snow festival viewing the sculptures. Both snow and ice depending on the location.

Snowing lightly and just below freezing. It has been tee shirt weather.

Hi everyone
Loyalist Jams is prepare with Christmas goodies for the latest Holly Jolly Market being held at the Crystal Palace in Picton.
It looks like I might even have some vegetables too plus my full line of preserves and pickles many of you haven't seen since Milford Fair or Busy Hands.
I have not been to the Crystal Palace in about 4 years for an event so it should be fun.

I was greatly surprised yesterday when delivering an order. I accidentally came across a person working at a wedding venue I delivered wedding jams to a couple weeks ago.

She gave me this lovely picture. I don’t often see how my product is displayed at specially venues.

With June just about over, did you know that June is buy local food month. The farmers are working hard to get seeds and plants in the ground to support the needs of our fellow man.
I am so happy to see that produce is coming from farms to the local markets. Thank you for your support. There are various symbols that represent products that are grown and produced locally. Do you know what they are and are you supporting them. There is the Canada maple leaf on jars of products produced in Canada with Canadian grown products and Foodland Ontario logo with products grown and produced in Ontario. Do you buy with these in mind.
Organically produced is another factor. Talk to your producer to see where their raw materials come from and how they are grown. This is important to all of us.
Getting a cheap raw or manufactured product is one thing but if it is going to affect your personal briefs it is another important factor. Both mental and physical health is important to all of us.
Bugs are here and evolution is changing them daily. I try to grow with companion planting to avoid chemicals. Sometimes bugs get the best of me but it is my lost.
To all of you who buy my products both raw and manufactured, I grow as my as possible. I support other local farmers in my region as I am a farmer. I grow organically. I am Foodland approved and certified on manufactured products.
June has opened many fresh products: Rhubarb, onions, herbs, leaf lettuce, peas, radishes, Garlic Scapes, strawberries. Soon there will be many more products as the summer progresses.
Isn’t summer great!
