Recipe: Sprouted Lentil & Herb Salad
This fresh and nutritious salad is perfect for a light meal or side dish.

Ingredients:
1 cup sprouted lentils
½ cup chopped cucumber
½ cup cherry tomatoes, halved
¼ cup finely chopped red onion
¼ cup fresh parsley, chopped
2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
½ tsp cumin
½ tsp sea salt
¼ tsp black pepper
Optional: ¼ cup crumbled feta cheese
Instructions:
Rinse the sprouted lentils well and lightly steam them for 5 minutes (or enjoy them raw for a crunchier texture).
In a large bowl, combine the lentils, cucumber, cherry tomatoes, red onion, and parsley.
In a small bowl, whisk together the olive oil, lemon juice, cumin, salt, and pepper.
Pour the dressing over the salad and toss well to combine.
Let it sit for 10 minutes to allow flavors to meld.
Optional: Sprinkle with crumbled feta before serving.

As a primary health care provider my focus is on digestive and hormonal disorders. As a health and wellness guru, my passion is to inspire and empower individuals to take ownership of their health, make better choices and feel great. I believe firmly in "health-wealth." This is my description of a state of emotional and physical health fostering an abundance of wealth. There is no wealth above our health! Over the past 14years, I have collaborated with many healthcare professionals and coached many patients to improve their health and sense of wellbeing. Over the past 5years, I have worked with many patients dealing with IBS, anxiety and transitional life stages such as puberty, perimenopause and menopause and pain sufferers. When patients work with me, they are able to identify and overcome their obstacles to better health, feel energetically and emotionally empowered to achieve their goals and live a happier life. That is what I am most passionate about!
