Whipped up some Chicken Souvlaki this eve and enjoyed it on a bed of whole grain organic quinoa with Tzatziki and light feta. My Tzatziki is made with lots of cucumbers, plain no fat Greek yogurt, apple cider vinegar, lemon juice, fennel, h**p hearts, chia and flax seeds.

Roasted one of my son's chickens cut in half yesterday and had 4 servings of it with baked Jerk rice and veggies. I made a huge soup tonight with it and had 4 big bowls already and have 3 servings left to freeze and another serving of chicken still left for a sandwich or nachos, etc.

Who puts leftover soup in a bag to freeze - this gurl! Love my vacuum sealer!

Besides the broth and spices, I also add lots of fresh ginger to my soup and it's super easy to make with a bag of frozen soup mix veg and I added some more carrots to it. I throw in some pasta and rice as well. Nom nom nom!
