JAPCHAE — Saladmaster Way
Ingredients:
• 300g sweet potato glass noodles (dangmyeon)
• 4 tbsp soy sauce
• 2 tbsp sesame oil
• 1–2 tbsp sugar
• 1 tbsp sesame seeds
• 1–2 cloves garlic, minced
• Black pepper
• 1 onion, sliced
• 1 carrot, julienned
• 1 bell pepper, sliced
• 2–3 cups spinach
• 6–8 shiitake mushrooms, sliced
• 1 small zucchini, julienned (optional)
• 1 cup beef or chicken strips (optional)
Instructions:
1. Cook spinach (waterless):
Preheat your Saladmaster skillet on medium heat until water droplets dance. Add spinach, cover, and cook 1–2 minutes. Remove, squeeze out water, and set aside.
2. Cook noodles:
Boil dangmyeon 7–10 minutes until soft. Rinse with cold water, drain, and mix with 1 tbsp soy sauce and a little sesame oil to prevent sticking.
3. Cook vegetables (waterless):
Preheat skillet again on medium. Layer onions, carrots, bell peppers, mushrooms, and zucchini. Cover until the v***r valve clicks (about 3–5 minutes). Reduce heat to low and cook 3 more minutes until vegetables are tender-crisp.
(If using meat, sauté it first until cooked, then add veggies.)
4. Make the sauce:
Mix soy sauce, sesame oil, sugar, garlic, and pepper in a small bowl until sugar dissolves.
5. Combine:
Place noodles, vegetables, cooked meat (optional), and spinach in a large bowl. Pour the sauce over and toss until well coated. Adjust seasoning with more soy sauce, sugar, or sesame oil to taste.
6. Finish:
Top with sesame seeds. Serve warm or chilled.
