Ingredients:
Crust:
2 cups graham cracker crumbs 🍪
1/2 cup melted butter 🧈
Cheesecake Filling:
2 cups cream cheese, softened 🧀
1 cup powdered sugar 🍚
2 cups heavy whipping cream 🥛
1 can (20 oz) crushed pineapple, drained 🍍
Topping:
1 can (20 oz) pineapple rings, drained 🍍
Fresh raspberries for garnish 🍓
Whipped cream for topping 🍦
Instructions:
1️⃣ In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9x13 inch baking dish to form the crust.
2️⃣ In a large mixing bowl, beat the cream cheese and powdered sugar until smooth and creamy.
3️⃣ In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
4️⃣ Spread half of the cream cheese mixture over the crust. Evenly distribute the crushed pineapple over the cream cheese layer.
5️⃣ Spread the remaining cream cheese mixture over the pineapple layer.
6️⃣ Arrange the pineapple rings on top and garnish with fresh raspberries.
7️⃣ Add dollops of whipped cream around the pineapple rings for an extra touch.
8️⃣ Refrigerate for at least 4 hours, or until set. Serve chilled.
