Blender Black Bean Brownie Recipe 🍫

Ingredients:
1 can black beans
3 eggs
1/2 cup organic cacao powder (Nourish 🍃)
1 cup maple syrup
1/2 cup coconut oil (melted)
2 tsp organic vanilla extract (Nourish🍃)
1/2 tsp baking powder (Nourish 🍃)
1/4 tsp real salt (Nourish 🍃)
3/4 cup chocolate chips

Instructions:
Preheat oven to 350F
Spray 8 x 8 pan with avocado oil or line pan with parchment paper
In blender - add all ingredients except chocolate chips
Blend until smooth
Stir in chocolate chips
Pour mixture into pan and add some extra chocolate chips to the top if you’re feeling feisty 💃
Bake in the oven for 30 minutes or until a toothpick comes out clean
Wait to cut them until they’ve cooled and they are way yummier and fudgier if you can muster up the patience to pop them in the fridge for a bit before eating! Enjoy!

Hot honey chicken bowls 🍯

Ingredients:
6 Chicken thighs
1 red onion
2 medium sweet potatoes
Feta cheese
Hot honey sauce (we like peace river or mikes brand)
Avocado
Green onions
Microgreens
Olive oil
Paprika, garlic powder, salt and pepper

Directions:
Preheat oven to 425F and air fryer to 400F
Dice chicken thighs, red onion and sweet potatoes
Add chicken thighs and red onion to a sheet pan, drizzle with olive oil, paprika, garlic powder and salt and pepper
Add diced sweet potatoes to air fryer, drizzle with olive oil, paprika, garlic powder, salt and pepper
Bake chicken and onions for 25 minutes until chicken is cooked through and air fry potatoes for 10-15 minutes at 400F
Add microgreens to the bottom of your bowl. Top with cooked sweet potatoes, chicken and onions. Add toppings: feta, hot honey, green onions, avocado

Enjoy for your next meal prep day or add it to your dinner rotation! 🥑

Creamy tomato and red lentil soup 🍅 🍜

Ingredients:
1 tbsp butter
1 white onion, chopped
3 cans diced tomatoes
1 cup red lentils, rinsed
5 cups chicken bone broth
1 cup heavy cream
1 tbsp tomato paste
2 cloves garlic
Salt & pepper
2 tbsp maple syrup
Toppings: fresh parm + croutons

Directions:
Melt butter in large pot over medium heat
Add onions and garlic and cook until softened
Add all other ingredients except cream and bring to a simmer. Cook for 15 - 20 minutes
Puree soup with an immersion blender
Add cream and more salt and pepper if needed
Top with your toppings, serve with a slice of sourdough and enjoy! 😋

Some great pre-workout meal/snack ideas:
- Oatmeal with almond butter and berries
- Granola with milk and fruit
- Chicken, sweet potatoes and greens tossed in an olive oil dressing
- Rice cakes topped with peanut butter and fruit
- Chicken sandwich or a wrap with some avocado
- Homemade pizza on a whole wheat wrap with olives and chicken
- Turkey Roll Ups with a handful of almonds
- Steak, brown rice and veggies steamed with some butter
- Smoothie with Greek yogurt, frozen fruit, h**p seeds and spinach
