Anyone who says mushrooms don’t offer much nutritional value, just doesn’t know anything about mushrooms!

They are a powerhouse of nutrients and have amazing antioxidant properties (especially the Japanese varieties!). They’re an excellent source of vitamin D, B vitamins and fibre, amongst many other important things.

Their meaty texture offers a great vegetarian option and they can standalone or be added to pretty much any dish. I’ll be making crab stuffed mushrooms this weekend!

Have you been eating green beans this summer?

Growing up, my family had a vegetable garden that always had green beans and I NEVER ate them. They would yield so much that my dad used to give them out to our neighbours by the grocery bag full! They sure seemed to enjoy them 😊.

Now that I eat them, I see what the fuss is about. They can be a variety of colours too! They’re full of fibre and are rich in vitamin C and beta carotene.

My favourite way to eat them is by roasting in the oven and then tossing them in my homemade lemon vinaigrette once they’re done.

Who loves watermelon? 🍉

To be honest, I don’t, but I seem to be on my own with this one 🤷‍♀️.

For those of you that do enjoy it, you’re doing your body a favour by eating it! Watermelon is excellent for hydration (it’s in the name!), but it’s also loaded with Vitamin A, C, potassium and B6. A refreshing snack that’s low sugar, you should get it in you while it’s in season and inexpensive! Make sure you eat the flesh as opposed to juicing it, that’s where the fibre is 😊.

An excellent source of vitamin C and manganese, with decent amounts of folate and potassium, they’re a delicious treat that can be enjoyed fresh or frozen! They are rich in antioxidants and plant compounds, which may have benefits for heart health and blood sugar. It’s so sweet and delicious and works well in sweet and savoury dishes.

They are loaded with antioxidants and extremely rich in vitamins C, A, B1 and folic acid.

Also, pineapples are known for being full of digestive enzymes, such as bromelain, that help digest protein!
