Cozy, light, and protein-packed 🥣✨
Ingredients
• ½ carton fat-free chicken broth
• 2 cups water
• 2 tsp oil
• 1 cup celery
• 1 cup zucchini, chopped
• 1 cup crushed or puréed tomatoes
• ¼ tsp dried basil
• 6–8 oz turkey breast or ground turkey (meatballs or crumbled)
• 1 cup konjac noodles (optional)
• salt + pepper, to taste
Directions
1. cook turkey separately and set aside. Or use leftovers from the holidays!
2. in a pot, sauté celery and zucchini in oil until tender (add garlic if you like).
3. add tomatoes, water, and broth. season with basil, salt, pepper, and any herbs you love.
4. rinse and drain konjac noodles per package directions, then add to the pot along with turkey.
5. simmer on low-medium for at least 5–10 minutes.
6. enjoy ✨
notes
• garnish with parsley + a squeeze of lemon
• double the recipe to use the full carton of broth and have leftovers
• customize with garlic, thyme, oregano, chili flakes, or whatever your nervous system craves
