Fall Comfort 🍁🍂🫘
Split Mung Bean Curry
* 2 tablespoons of olive oil
* 1 large onion
* 1/4 Tsp of chilli flakes
* 4 garlic cloves
* 2 tablespoons of grated ginger
* 1.5 cups yellow mung beans
* 1 tbsp ground turmeric
* 2 teaspoons curry powder
* 1 tsp garam masala
* 4 cups bone broth
* 1 large can diced tomatoes
* juice of half a lime or lemon
* Celtic salt and ground black pepper
* Cilantro to garnish
