Try a new recipe this long weekend!
Bean Salad
Ingredients:
1 can black beans
1 can kidney beans
1 can chickpeas
1 mango (peeled and diced)
1/2 red onion (peeled and diced)
1/2 red pepper (diced)
1/2 green pepper (diced)
2-3 cloves garlic (diced or minced)
2 jalapeno peppers (diced, with seeds removed)*
1/3 cup olive oil
1/2 cup fresh cilantro
3-4 tbsp lime juice (juice of 1 lime)
Salt and pepper (to taste)
*Use only 1 jalapeno if you want to make the dressing milder
Instructions:
1. Rinse and drain the beans/chickpeas and place them in a large bowl.
2. Add diced mango, red onion, and red and green pepper to the beans.
3. Add garlic, jalapeno, and olive to a frying pain, and sauté until lightly browned to make the dressing for the salad.
4. Pour the dressing over the salad.
5. Top with cilantro and lime juice. Season with salt and pepper to taste.
