📣 Important Reminder for Our Celiac Community📣

We want to take a moment to gently remind our community of an important safety principle:

For individuals with celiac disease, the only bakeries considered safe are those that are 100% dedicated gluten-free and that follow strict, verified gluten-free production standards.

There has been renewed discussion online and in the media about bread made with traditional grains and long fermentation processes, with claims that fermentation “breaks down gluten.”

It’s important to clarify:
👉 There is no scientific evidence that fermentation, sourdough methods, or special processing makes gluten-containing grains safe for people with celiac disease.

While fermentation can change the structure of gluten, it does not eliminate the immunogenic gluten peptides that trigger the autoimmune response in celiac disease. Even trace amounts can cause intestinal damage, sometimes without immediate symptoms.

Please keep in mind:
•“Low gluten,” “easier to digest,” or “broken down gluten” does not mean safe for celiac disease
•Symptoms are not a reliable indicator of harm, damage can occur “silently”
•Only foods that are certified gluten-free or produced in a dedicated gluten-free facility should be considered safe

We also want to hear from you.

If you have:
•Encountered a bakery or business stating that their process makes gluten safe for people with celiac disease
•Been told (in person or online) that a gluten-containing product is safe for celiac disease
•Become unwell after consuming a product marketed this way

Please consider:
•Reaching out to our chapter so we are aware
•Contacting your local/provincial health inspector to report misleading claims

Our goal is education and safety, not blame. Misinformation around celiac disease can unintentionally put people at risk, and sharing accurate, evidence-based information helps protect our entire community.
