My name is Lara, an avid foodie at heart and life philanthropist by day and a wellness junkie who adores skincare and all things beautiful by night. By identifying where growth is desired, setting goals and objectives, and holding accountability, clients will reach their highest goals and dreams. You'll never have a dull conversation when getting coached by me, and I love to indulge on exploring new places to eat and talk about the beauty of never-ending topics that interest me. I'm here to provide accountability, providing factual information, and build strong relationships with all my clients. Carbs often get a bad reputation, but here’s the truth: 🥖🍝

➡️ Carbs are your body’s main source of energy
➡️ They fuel your brain + muscles
➡️ Pasta, rice, bread and even potatoes can absolutely fit into a balanced lifestyle

It’s not about cutting out your favourite foods — it’s about balance, variety, and enjoying what makes you feel good. So yes, that cozy bowl of pasta has a place on your plate. 💛

📷 Pumpkin Soup Recipe (Credits/Derived from Nora Cooks)

1. In a large pot, warm the olive oil over medium heat. Add the sliced onions and cook for about 30 minutes, stirring occasionally, until they caramelize. I like to sprinkle a teaspoon of sugar and a pinch of salt over them as they cook. They should turn a beautiful golden brown.
2. Once the onions are caramelized, add the garlic and cook for an additional minute, stirring constantly.
3. Next, add the salt, cinnamon, ginger, and nutmeg. Stir the spices into the onions and garlic mixture.
4. Pour in the pumpkin puree and broth, mixing everything thoroughly. Bring the soup to a boil, then reduce the heat and let it simmer for 15 minutes.
5. Use an immersion blender to blend the soup directly in the pot, or transfer it in batches to a regular blender, then return it to the pot.
6. Stir in the maple syrup and coconut milk. Serve with fresh bread if desired and enjoy!

Notes

1. You can also drizzle coconut milk or plain vegan yogurt on top for extra flavor. Pepitas add a nice crunch as a garnish.
2. If you prefer fresh pumpkin, it’s a bit more work: take a 4-pound pie pumpkin, cut it into wedges (removing the seeds), and roast in the oven at 400°F for about 20 minutes until tender. Peel the flesh from the skin and use it as you would pumpkin puree.
3. Store leftovers in a covered container for 3-4 days, or freeze for up to 3 months.

2. Start Small: Begin with meal prepping just one or two meals per week. Gradually increase the number of meals you prep as you become more comfortable with the process.
3. Batch Cooking is Key: Prepare large batches of staple ingredients such as grains, proteins, and vegetables. These can be mixed and matched throughout the week to create a variety of meals.
4. Invest in Quality Containers: Invest in a set of high-quality, reusable containers in various sizes. Opt for containers that are microwave-safe, dishwasher-safe, and freezer-friendly to make storing and reheating your meals a breeze.

🌱 Let’s talk chickpeas – those little nuggets of goodness that are basically kitchen superheroes! Seriously, they’re like the Swiss Army knife of ingredients, and a main ingredient in this Veggie Burgers 🍔
