EGG WHITE FOOD SENSITIVITIES:
Many patients come to me for food sensitivity testing — a blood test to look for foods the immune system is reacting to.
These “food sensitivities” are foods which can be linked to symptoms of: digestive issues (gas, bloating, constipation, diarrhea), acne, migraines, joint pain, eczema and other skin rashes, worsened autoimmune issues, etc.
Sometime “egg whites” shows up on this test, making it hard for patients to find breakfast meal ideas!
One things I say to these patients is you can STILL eat eggs, just eat the YOLKS!
As someone who has struggled with egg white sensitivities myself (and an avid egg lover), I have learned it is still possible to make delicious breakfasts with eggs!
Instead of cooking a whole egg, I will simply separate the yolks from the white in my hand and make a quick-heated yolk.
This morning we made delicious Mexican-style breakfast burritos with lightly cooked yolks:
- 2 egg yolks 🍳
- 2 organic corn tortillas
- onion and pepper, sautéed
- fresh cilantro
- avocado, diced 🥑
- chili powder, coriander and cumin
- a few pieces of your favorite nitrate-free bacon 🥓
If you lightly cook the yolk and then flip, you can even have a runny yolk to flavor the entire dish! 😋
