Let me tell you guys… the flavour combination and overall profile was on point. I highly recommend you try this especially if you like black sesame.

When I first became a nutritionist, I felt this pressure to show up perfectly and eat perfectly, because I kept thinking, how am I supposed to set an example for my clients? But I realized that way of living only adds more stress which defeats the whole purpose. Food is meant to be enjoyed (obviously in moderation).

I think the important part is to first build a foundation. Figure out what works for you and what your goals are. Because it is possible to be healthy and achieve your goals while still eating the foods you enjoy.

Stop punishing yourself around food🩷

Parsley Pistachio Pesto with Spelt Noodles

Need a way to use up those herbs before they go bad? This Vegan Parsley Pistachio Pesto with spelt noodles is the perfect solution! 🌱✨ Not your traditional pesto, but equally delicious and packed with so much flavour and nutrients!

Ingredients:
* 2 cups fresh parsley
* 1/2 cup pistachios
* 1/4 cup sunflower seeds
* 1/4 cup extra virgin olive oil
* 1/4 cup nutritional yeast
* 2 cloves garlic (or more, depending on preference)
* sea salt to taste
* freshly cracked black pepper to taste
* 2 cups spelt noodles (or any pasta of your choice)
* 1/4 cup pasta water

Instructions:
1. Cook your spelt noodles according to the package instructions. Save 1/4 to 1/2 cup of pasta water for the sauce.
2. In a food processor, combine the parsley, pistachios, sunflower seeds, garlic, nutritional yeast, sea salt, and pepper.
3. Pulse to break it all down into a coarse mixture. Gradually add olive oil while processing until the pesto comes together into a smooth, creamy consistency.
4. Toss the pesto with the cooked spelt noodles, pasta water, mix until evenly coated and enjoy!
