Up to half the composition of blackcaviar is water, even more than 30% is , about 13% is saturated fatty acids.
About 5% of the composition of black caviar is gold.
The fat of black caviar is different from those fats that are part of the muscle composition of the same fish sturgeon: the iodine amount in caviar fat is higher than in muscle fats.
Caviar has a lot of lecithin, fat-soluble vitamins A, E and D, vitamins of group B. Rich mineral composition: iron, calcium, potassium, magnesium, sodium, iodine, silicon, zinc (there are other minerals, but in a small amount).
