Love recipes with OPTIONS. You don’t have Cocojune yogurt……no biggie use avocado! Use any veggies you want! CREATE ✨
Chopped Egg Salad and Veggie Beauty (Bye-Bye Mayo!) 🥚
*DF + GF
10 large hard-boiled eggs
2 stalks celery, trimmed, diced small = can use any veggies!
½ cup spinach or Organic Girl Greens chopped fine = can use any greens or microgreens!
1/2 cup minced red onion
2 tbsp Dijon mustard
3 tablespoons plain coconut yogurt or cottage cheese or an avocado!
2 tablespoons brine from sauerkraut or kimchi = probiotics!
Everything but the Bagel Seasoning (to our liking!) or use fresh herbs or BOTH!
Sea salt + Pepper to tast
In a large bowl, mix all the ingredients. Dice hard-boiled eggs and add to the bowl, mash a few of the eggs for texture. Add salt + pepper, if needed. The egg salad will keep, refrigerated for multiple days.
