Dietary cholesterol and why it’s ok to keep eating it.
This is a quick article from CNN that does a great job of explaining why cholesterol is important (production of s*x steroid hormones, cell membranes and converting sunlight to vitamin D, among other things), how saturated fat contributes to LDL cholesterol levels in the body, and the egg (contains cholesterol but low saturated fat).
In college I did an econometrics project on egg consumption in the United States and how it dramatically changed when reports eating cholesterol was contributing to the nation’s cardiovascular disease epidemic, so I always like articles that once again reiterate that eggs are not ‘bad’ to eat.
Hope you enjoy this bit of information on this sunny Sunday. Enjoy your eggs this morning, but maybe hold of on the hollandaise 🙂

What you eat can play an important role in maintaining cardiovascular health, and it's reasonable to think that eating cholesterol-laden foods will raise your cholesterol levels. But the connection isn't quite that simple.
