SAVORY GOAT PIZZA

Step 1. Preheat Oven to 425 Degrees F.

Step 2. Brown the ground goat meat slowly over the stove burner. I do like to use less than medium heat. The slower you cook the goat meat the more tender it is.

Step 3. Lightly spray a pizza tray with cooking spray.

Step 4. Spread out the dough evenly around the pizza tray with your fingers. Be sure the entire tray is covered with dough. Note: You can use store bought pizza crust. It works just fine and also tastes great.

Step 5. Spread your sauce evenly over your pizza dough.

Step 6. Add the browned goat meat onto the sauce and spread the meat evenly throughout your dough.

Step 7. Sprinkle cheese and other toppings over the pizza. This is where the fun begins. Make the pizza yours and add whatever toppings you want. You could add vegetables and other meats. We had some leftover pepperonis in the fridge, so we added them on.

Step 8. Place the pizza into the heated oven for 10-12 minutes or until the cheese is melted and crust is browned. Be careful taking your pizza out of the oven.

Step 9. Enjoy your pizza with a side salad and be sure to have a refreshing beverage to grab. Delicious!

BARBECUED RACK OF GOAT WITH HERBS AND LEMON

INGREDIENTS

* 1 tbsp Rosemary leaves (finely chopped)

* 1 tbsp finely chopped flat leaf parsley

* 3 tsp Fresh thyme

* 3 Garlic Clove (crushed)

* 1 tbsp oil

* 1 lemon (juiced and finely grated rind)

* 2 Goat racks (8-10 ribs in each)

* 1 Capsicum Red (grilled) an zucchini (to serve)

* Green salad (to serve)

METHOD

1 Combine the herbs, garlic, oil, rind and juice in a large bowl. Season well with salt and pepper. Add the racks of ribs, spooning over the herb mixture. Cover and marinate for 1 hour.

2 Preheat a barbecue or grill to hot. Place the ribs in the centre of the barbecue or grill. Reduce the heat. Cook for 15-20 minutes. Remove and rest for 10 minutes before cutting into smaller pieces. Serve with grilled vegetables and salad

INGREDIENTS
* 0.25 cups Barbecue sauce
* 2 tbsp Olive oil
* 2 Garlic Clove (crushed)
* 0.5 tsp smoky paprika
* cracked black pepper
* 500 g Goat ribs

METHOD

1 Place the barbecue sauce in a large non metallic bowl with the oil, garlic, paprika and cracked pepper. Stir until combined then add the goat racks and coat in the marinade. Cover and refrigerate for up to 3 hours.

2 Heat oven to 170C. Take the racks from the marinade (reserving the marinade to baste) and lay on an oiled wire rack in a large baking tray lined with baking paper. Cook for 20-25 minutes, basting regularly with the reserved marinade until cooked and sticky.

3 Serve with potato mash and steamed vegetables.

4 Note : cover racks with foil if they start to brown too quickly.

Daily Goat Recipe: Jamaican Goat Curry

Ingredients

Meat
* 2 lbs Bone-in goat meat bone-in lamb can be substituted
Curry
* 2 small to medium-sized onions
* 3 tablespoons sweet curry
* 5 tablespoons freshly ground allspice
* 1 tablespoon roughly chopped ginger
* 2 habanero/scotch bonnet peppers seeds removed
* 1 tablespoon fresh chopped thyme
* 4 large cloves of garlic
* 2 tablespoons tomato paste
* 2 teaspoons kosher salt plus more to taste
* 3 lamb fat or coconut oil
* 1 large sweet potato about 12 oz, cut into 2 inch squares
Instructions
* Combine the goat, salt, curry powder, allspice and thyme and allow to sit overnight.
* The next day, rough chop the onion, garlic, ginger and habaneros, then pulse in a food processor and reserve, be careful not to touch the habaneros, or just use gloves. The onion mixture should be coarse, not too fine, not too large.�
* Brown the goat pieces in a dutch oven in the fat, being careful not to burn the curry coating. When the meat is browned, add the onion mixture and cook for two minutes, then add the stock, cover and simmer on low heat for 2 hours or until the meat is just about fork tender.
* While the meat is cooking, peel the potatoes and cut into large pieces, add to the pot, and cook until tender. Double check the seasoning, adjust as needed and serve in bowls, with the coconut rice on the side, and a separate bowl for discarding bones.

Goat Tacos

Ingredients

* 1 red onion

* 1 teaspoon hot pepper (chili)

* 2 garlic cloves

* 500 grams goat (chopped kid)

* olive oil

* salt

* ground black pepper

* 1 yellow pepper (diced)

* 1/4 cup tomato paste

* 1 tablespoon brown sugar

* 1/3 cup vegetable broth

* 8 hamburger buns (tacos or 4)

* 8 lettuce leaves

* grated cheese

* basil (optional)

Directions

Cut the onions in thin slices, and dice the pepper.

Fry together for 5 minutes in a dash of olive oil.

Then, add the garlic, and cook for another minute.

Remove from heat and set aside.

Cook the chopped meat in a skillet over low heat with a little olive oil.

Fry the meat for 10 minutes until well-done.

Season with salt and pepper.

Add yellow pepper, chili, tomato sauce, brown sugar, and broth.

Simmer for 15-20 minutes.

Adjust seasoning, place a lettuce leaf in each taco, add the meat, and garnish with a little cheese and basil.
