Another soup and it’s coming at a good time this week. A little chilly outside and after a full day of recipe testing, I really wanted something light like this orzo soup. It was so good, warming and satisfying. A lot of brightness from the lemon. 🍋 If you’re looking for a light and cozy soup like this, definitely give it a try and use the beans you’d like for this. I used cannellini beans because that was what I needed to finish off. 💛

Lemon Cannellini Orzo Soup
1 tsp olive oil
1 small onion, diced
2 celery stalks, diced
2 small carrots, diced
6 cloves garlic, crushed and minced
2 tbsp canned coconut milk or vegan butter
1 can cannellini beans, rinsed and drained
1 tsp dry thyme
1/2 tsp Italian seasoning
1/2 tsp red pepper flakes
1 sprig Rosemary
2 bay leaves
5 cups vegetable broth
3/4 cup dry orzo
Juice and zest of 1 large lemon
1/4 cup chopped parsley
Salt and pepper to taste

In a large pot over medium heat, add olive oil, carrot, onion, celery and a pinch of salt. Stir and allow to cook until softened. Add in garlic and sauté until fragrant then stir in white beans, coconut milk, thyme, pepper flakes, and Italian seasoning. Combine and then pour in vegetable broth and add in a pinch of salt, bay leaves and sprig of Rosemary. Bring pot to a low boil and add orzo. Stir well and allow to cook for 10-12 minutes to cook orzo. Remove from heat and squeeze in lemon juice and add lemon zest. Remove bay leaves and Rosemary sprig. Stir in parsley and allow to naturally soften in the soup. Adjust salt and pepper to taste and enjoy. 🥣

Notes: Quality of herbs makes a big difference in flavor. I also like this garlicky, so use a lot of garlic to achieve this or add some additional garlic powder to it as it cooks. I used a large lemon. If you have a small lemon, use about 2 to brighten this up.

Scalloped Potatoes in a Creamy Lemon Dill Sauce 🍋 this recipe sounds pretty fancy but it’s actually so simple and SO GOOD!⠀⠀⠀⠀

RECIPE⠀⠀
What you’ll need: ⠀⠀
9x6” baking dish (or any baking dish you have!)⠀⠀
3 raw yukon gold potatoes (600g), peeled and sliced*⠀⠀
Chopped dill, for garnishing⠀⠀
⠀⠀
For the Lemon Dill Sauce:⠀⠀
1 tbsp olive oil⠀⠀
1 shallot, diced⠀⠀
1 cup room temperature coconut cream ⠀⠀
1/4 cup room temp. water⠀⠀
1 tbsp all-purpose flour ⠀⠀
2 tbsp lemon juice⠀⠀
1 tbsp chopped dill⠀⠀
2 tbsp nutritional yeast (optional but highly recommended)⠀⠀
1 tsp salt, or to taste⠀⠀
⠀⠀
Steps⠀⠀
1. Heat an oven to 350F.⠀⠀
2. Wash the potatoes and then peel. Slice into 1/4-1/3 inch thick slices. Arrange half of the slices on the baking dish. Set aside the rest of the pieces. ⠀⠀
3. In a pan, heat 1 tbsp olive oil. Add in the shallots. Cook until tender and aromatic, around 4 minutes. Add in the coconut cream and water. While stirring in a circular motion, add in the flour.⠀⠀
4. Add in the rest of the ingredients. Continue to stir while the sauce simmers over medium heat. Leave to cook until the sauce thickens from the flour. Adjust flavours depending on desired taste. Turn off heat.⠀⠀
5. Pour half of the sauce over the potatoes in the baking dish. Arrange the remaining potatoes for the second layer and then pour the remaining sauce.⠀⠀
6. Bake for 55-60 minutes or until potatoes are cooked through and the topmost later is golden brown on the edges. Garnish with some more chopped dill, if desired. Enjoy while hot!

Chinese-style No Beef and Broccoli by 🥦 Perfect over some steamed rice for a delicious & satisfying meal! Recipe below:

Chinese-Style No Beef and Broccoli
Good for 2-3 servings
_
Ingredients
10 dried shiitake mushrooms, soaked in hot water for 12-15 minutes*
2 cups (250g) raw broccoli florets
1/4 cup water
1 small (70g) red bell peppers, sliced into strips
1/2 red onion sliced into strips
4 cloves garlic, minced
1 tbsp canola or other neutral cooking oil
Sesame seeds and chopped spring onions for garnishing
3 cups of steamed white rice or other rice, for serving

Note: *Feel free to use fresh shiitake mushrooms.

Sauce
1/4 cup soy sauce
1/4 cup + 1 tbsp room temp. water
1/4 cup coconut sugar, adjust according to desired sweetness
1 1/2 tbsp Chinese rice wine, optional but highly recommended
1 1/2 tbsp cornstarch
1 tbsp sesame oil

Steps
Rehydrate the dried mushrooms by soaking in hot water. Squeeze out excess liquid from each mushroom and then slice them into 1/2-inch thick strips. If using fresh mushrooms, simply slice them into strips. Set aside.
In a bowl, mix all the sauce ingredients together until the sugar is diluted. Set aside.
Heat a non-stick or cast iron pan. When hot, add in 1 tbsp canola or neutral oil. Sauté the onions and garlic until tender and aromatic, around 2-3 minutes. Add in the broccoli florets. Pour ¼ cup water and leave to cook over medium high heat until half-cooked. Add in the bell peppers and sauté for a few more minutes.
Add in the mushrooms. Pour in the sauce mixture. Mix everything together and leave to simmer over medium heat until the sauce has thickened from the cornstarch. Turn off heat.
Serve with some steamed rice. Garnish with some sesame seeds and spring onion, if desired. Enjoy while hot!

VEGAN FUDGE BROWNIES 🤤

Ingredients:
1 1/2 cups all purpose flour flour
1/2 cup Dutch processed cocoa powder (or regular cocoa powder... Dutch style is darker & deeper in flavor)
3/4 cups cane sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoon salt
1 tbsp espresso powder
1 cup almond milk (or any plant milk)
1/2 cup Apple sauce
2 Tablespoons apple cider vinegar
1/3 cup + 2 tbsp refined coconut oil, melted
1 teaspoon vanilla
1 1/2 cup dark chocolate, chopped (I used 85% )
1 tbsp coconut oil
Flakey sea salt for topping
1. Preheat oven to 350 F. Line a 10x by 10x pan with parchment paper.
2. In a large bowl sift the flour, cocoa, sugar, baking soda, baking powder, espresso powder and salt. Whisk together.
3. In a separate bowl, mix almond milk, apple cider vinegar, melted coconut oil, apple sauce and vanilla extract.
4. Pour the wet ingredients into the dry ingredients & mix with a rubber spatula until mixed. Then add in 1 cup chopped dark chocolate. Pour the batter out into the parchment lined pan. Set aside and In a small bowl, add the chocolate chips. Melt chocolate in a double boiler or Microwave for 30 seconds then stir. Microwave again, in 20 second bursts, stirring well after each time, until melted then add 1 tbsp coconut oil.
5. Dollop the melted chocolate around the surface of the brownie batter. With a chopstick, swirl the chocolate around the brownie mix.
6. Bake In preheated oven for 28 minutes. Let sit for 30 minutes before cutting in! •
7. I like to melt a little extra chocolate and drizzle on top once brownies are out of the oven! Then top off with flakey sea salt 😍

A study published in the journal Environmental Science and Technology found at least 12 hazardous air pollutants emitted from gas stoves in California. One of them includes benzene. It is a chemical known to cause cancer in some people with long-term exposure.

3 medium-sized potatoes
1/2 tbsp oil
1 small/medium onion, chopped

1/3 cup vegan sour cream

6-8 tbsp vegan cheese

Crispy Curry Vegetable Wontons

Ingredients:
1 pack square wonton wrappers*, thawed in room temperature
2 tbsp sesame oil
3 cloves garlic, minced
1/2 head cabbage (225g), makes 1.5 cups minced
1/2 cup cooked and mashed pumpkin*
100g carrot, makes around 1/2 cup minced
1/2 cup (20g) chives, chopped
1/2 cup (25g) shiitake mushrooms, minced
1 tbsp soy sauce
1 tbsp curry powder
1/2 tsp salt, or to taste
Canola oil or other neutral oil, for frying
Sweet chili sauce or other sauce, for dipping
Chopped spring onions, for garnishing

Steps:

1.Heat a pan. Add in 2 tbsp sesame oil. Saute the garlic until aromatic. Add in the minced cabbage, carrot, chives, and mushrooms. Once the vegetables are tender, mix in the pumpkin or other starchy vegetable.
2.Place the filling in a bowl. Leave to cool for a few minutes. If you are not using a starchy vegetable, add in the cornstarch and mix.
3.Prepare a bowl of water and the wonton wrappers.
4.Place around 1/2 tbsp of filling in the center of the wonton wrappers. Dip your finger in some water. Run your finger through the top edge of the wrapper and then seal by folding in half.
5.Seal both pointed edges of the wrapper with a dip of water. Repeat this step for the rest of the wrappers. See photos above for step-by-step wrapping process.
6.Heat a pan with oil enough to submerge the wontons. Once hot, add in the wontons. Make sure they are evenly spaced and do no stick to one another. Fry until golden brown and crisp, flipping over to evenly brown on both sides.
7.Enjoy while hot with your favourite sweet chili sauce!

Blueberry lemon pound cake 💙 🍋

Wet
3/4 cup almond milk
3/4 cup sugar
2 tsp vanilla extract
3 tbsp veg oil
half lemon, juiced and zested
1/2 cup non dairy yoghurt (I used almond yoghurt)
Dry
2 cups all purpose gluten free flour
1/4 tsp xanthan gum
1.5 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup blueberries
Preheat oven to 180•c and line a loaf tin. Mix all wet ingredients together in a bowl until smooth. In a another bowl, add all dry ingredients apart from blueberries. Stir to combine, then add to the wet ingredients and mix to form a smooth batter. Fold through 3/4 cup blueberries, saving the rest. Fill loaf tin with batter and sprinkle blueberries on top. Bake for 60 mins, until golden and a toothpick comes out clean. Cool completely before slicing.
