Busy day of eating as a vegan 🥗

Who’s also a coach, an entrepreneur, a husband, a cat owner (more they own me) and a volunteer for stray cats

Mondays are by far my busiest days

But with a few tricks like meal prepping on Sunday night and making quick and easy meals, I manage to have a healthy day of eating just like any other day

Vegan Caesar salad 🥗

With 40g of protein.

Makes 1 portion:
1 handful lettuce
1 handful spinach
1 tomato, diced
80g (2 slices) sourdough bread, chopped
200g vegan “chicken” (recipe below)*

Dressing:
20g vegan mayo
Couple of drops of vegan Worcester sauce
1 tsp Dijon mustard
1 tbsp vegan crack (aka nutritional yeast)

Mix and enjoy!

*For the vegan chicken chop 200g or firm tofu, toss in 1 tsp olive oil, 1 tbsp cornstarch, dried oregano, salt and pepper and bake for 20 minutes at 200C/ 400F

Quick high protein & high fiber lunch 💪🏼

Tofu pesto pasta

Save this recipe for your busy weekdays!

For 1 portion:
200g (14 oz) firm tofu
1 tsp oil of choice
16g (2 tbsp) cornstarch
Pinch of salt
80g (3 oz) whole wheat penne
30g (2 tbsp) of your favorite vegan pesto
Cherry tomatoes
Nutritional yeast on top

10-min high protein & high fiber lunch 🍝

Ingredients (for 1 portion):
100g red lentil pasta
2 small or 1 medium cooked beetroot
20g almonds
1 tbsp extra virgin olive oil
1 tsp balsamic vinegar
1/4 tsp dried oregano
Pinch of salt

To top:
Soy yogurt, unsweetened
Lemon juice to taste
