Fresh & vibrant detox salad 🥗✨
A delicious mix of crunchy, sweet & tangy flavors—packed with antioxidants, fiber & skin-loving nutrients for a light, nourishing meal 💚
Ingredients (1–2 servings):
- Mixed greens (optional base)
- 1/2 cup blueberries
- 1 small beetroot, grated
- 1 carrot, grated
- 1 celery stalk, finely sliced
- 1 cup purple cabbage, finely shredded
- Handful of cherry tomatoes, halved
- 1/2 cucumber, sliced
- Fresh parsley, chopped
- 100 g goat cheese
Dressing (maple mustard vinaigrette):
- 1 tbsp apple cider vinegar
- 1 tsp mustard
- 1 tsp maple syrup
- 1 tbsp olive oil
- Salt & pepper
Method:
1. In a large bowl, add all the salad ingredients.
2. In a small bowl, whisk together apple cider vinegar, mustard, maple syrup, olive oil, salt & pepper.
3. Pour the dressing over the salad and toss gently.
4. Top with goat cheese and a few extra blueberries.
