KOUPEPIA (basically meat and rice rolled in grape leaves).
Many people have requested this traditional Mediterranean recipe to see how they can have the healthiest version ❤️
Steps:
- 1 onion cut in small cubes and pan fried in 1 tsp olive oil until golden
- pan fry 1kg minced chicken in 1 Tbs of olive oil and add salt , pepper and dried mint to taste
- add 1/2cup uncooked washed rice to chicken
- roll the mixture in presoaked grape leaves (fresh or frozen) and add them in a pot in an orderly fashion in layers)
- add some water, lemon(A LOT), salt and pepper, and a Tsp of olive oil
- place an inverted plate on top of the rolls (acts as weight and prevents rolls from unfolding)
- cover pot and cook on a medium fire until leaves are soft
- enjoy 😊

Cold oatmeal snack/dessert. I have been making this for decades and It never seems to fail. It satisfies every craving, plus it’s super healthy.

Take notes people, healthy recipe follows ⬇️

- 100g oats
- 100g raisins
- 1L oat milk (other vegan milks work just as fine)
- 25g agave/maple syrup
- cinnamon (more than you think)
- 1/2 tspn bitter almond extract (CRUCIAL)

Mix everything in a pot and cook on a medium fire for 15-20 minutes until you reach a creamy, hot oat meal consistency. Dont let it get very thick. THEN evenly distribute into 6 small bowls. Let them reach room temperature and then store in fridge. You can top with pomegranate and almond flakes if you want to. You can eat it hot, but it tastes SO MUCH BETTER once cold. Serve as a dessert, snack, preworkout, you name it.

Sweet potato boats, with spinach-chickpea filling:
How to make:
- wash sweet potatoes, cut lengthwise, and bake in oven with skin until soft
- create small boats by removing some of the flesh of the potato (save this for purée for other dishes)
- fill a pot with baby spinach, and add your chickpeas and goat's cheese (feta works just fine)
(TIP: you want to place the chickpeas in a bowl filled with water and remove their skin prior to cooking. This makes digestion much easier)
- add salt, pepper, cumin, nutmeg and some chili flakes, and stir until spinach is soft
- fill your boats with your delicious spinach/chickpea combo
- sprinkle some oregano on top
- enjoy

This is a delicious vegetarian meal, that can easily be transformed to a vegan meal by omitting cheese, or adding vegan cheese ❤️

For brunch, lunch or dinner, this recipe will always grab the attention of everyone.
Bread with lactose free cream cheese, ribeye steak and a light chimichurri sauce.

Cimichurri sauce:
- chopped parsley
- chopped oregano
- chopped garlic
- chopped red onion
- chopped coriander
- chopped bell peppers
- chopped tomatoes
- chopped chili
- oil and vinegar
- salt and pepper

For steak:
- remove from fridge half an hour before you cook it
- salt and pepper on both sides
- sear both sides 2-4 minutes on a HOT pan
- rest for 2-4 minutes

The Cypriot Psito (Ψητό), with chicken, potatoes and grapefruit, yes....grapefruit.
Even though many might get the jitters just of the thought of adding grapefruit in their ψήτο, I can reassure you, it's not a must; Orange works just as well 😂
The secret to this variation is the strategical placement of ingredients in your baking dish.
From base to top:
- potatoes (round-side down, don't stick)
- onion/shallots
- grapefruit/orange slices
- chicken with skin

It is crucial to season every layer before stacking the next, with: salt, pepper, paprika, cinnamon, garlic powder, thyme.
You can also place some cardamon pods, dry bay leaves and Star anise on the bottom of your dish for extra aroma.
No oil needed, no water needed. Trust me!
Place the dish in a preheated oven at 150°C, for 40 mins, and then at 200°C for 20 mins.
Serve with fresh salad and some greek yoghurt for a wonderful Sunday lunch.

- 1 tbsp extra virgin olive oil
- 1 tsp honey
- 1 tsp mustard
- 1 tsp balsamic vinegar
- juice of 1/4 lemon

Ingredients for salad:
- salad leaves
- tomatoes
- cucumber
- parsley
- fresh mint
- carrot
- shallot

Ingredients for sauce:
- finely chopped chili 🌶
- ground ginger
- 1 tsp honey 🍯
- lime
- salt and pepper

Top with 1 tbsp of roasted pine nuts or peanuts 🥜!

P.S: steaks usually need 2.5-4 minutes per side (depending on preference)on a STRONG fire.

Healthy Chocolate Treat 🍫🥣

Ingredients:
(serves one)

-strained yogurt (150g)
-chia seeds (2 tbsp)
-1 tsp honey or any other sweetener of your choice
-2 tbsp cocoa powder

Mix all ingredients well (add to refrigerator for extra thickness and a cooler taste ❄️)

Top with some banana (or any other fruit of your choice🍓🍍🍇🥭), dark chocolate and 1 tsp of peanut butter🥜
Sprinkle with some h**p seeds for some extra omega-3! 😊

Stir-fried tofu with rice noodles🍜 (and it's vegan too! 🌱)

RECIPE: (serves 2)
-2 cups tofu (cut in cubes)
-1 cup rice noodles
-frozen/fresh Asian mix vegetables
-1 tbsp grated fresh ginger
-1 lemon
-2 tbsp soy sauce
-1 tbsp sesame oil

In a bowl of rice noodles add boiling water and after ~5 mins strain them.
Stir fry vegetables until cooked, add the tofu and the rest of the ingredients.
Add extra lemon and sprinkle with spring onion and some sesame seeds.
