Ciasteczka orzechowe z czekoladowymi pipkami.
- 300 g mąki, dałam 2/3 krupczatki, 1/3 tortowej
- 200 g masła/tłuszczu
- 150 g cukru (dałam 100g i było za mało słodkie dla mnie!)
50 g gorzkiej czekolady podziabanej na pipki
- 3-5 łyżek masła orzechowego
Masło ucieramy robotem z tłuszczem, dodajemy cukier, ucieramy aż znikną grudki, dodajemy mąkę. Ucieramy, aż się zrobią tłuste granulki. Zagniatamy ręcami na jednolite mase. Dorzucamy czekoladowe pipki. Mieszamy, żeby się jakoś tam mniej więcej równomiernie w cieście rozłożyły. Lepimy kulki wielkości orzechów włoskich max. Rozplaskujemy kulki na blasze ubijaczka do ziemniaków, która daje takie cudowne elementy deko.
Do rozgrzanego do 180 stopni piekarnika wkładamy na 15-18 minut. Smacznego!

I wanted to take to work something different than a sandwich. So I made those. Called them "pieroguchy", which in Polish means (more or less) something bigger than dumplings/empanadas. So is made from whole grain flour (100 g whole grain, 200g regular flour, 1 tsp salt, 200 ml warm water, 3-4g yeasts, 2 tbsp olive oil) and stuffed with lentils, pumpkin and rice (half cup green lentils, half cup long grain rice, half onion, and a cup of pumpkin chopped in 1 cm cubes). Spiced with 1 tsp cumin, 1 tsp corriander, 1 tsp sweet papryka, 1 tbsp smoked spicy paprika, 2 tbsp dark soy sauce, 1 tbsp marjoram and 3 cloves of garlic.
So first I made a dough and let it grow for 45 minutes
In the meantime I cooked lentils with rice in 2 cups of water until soft, and I fried chopped onions on oil, adding all the spices. When golden, added pumpkin, and simmered until soft. Mixed it with lentils and rice and mashed a little bit. Let it cool, while dividing dough into 4 pieces, making round flat kinda mini pizzas. Put filling on it, living edges free, then using them to "close" the pieroguchy. I'm the meantime my oven got 180C degrees, do I put them in and baked for about 15 minutes. Yum! ;)

So today more of autumn dishes. Pumpkin soup and buckwheat with soy cutlets in tomato greavy. Some cornishons on side. ;...

Today something yummy for long autumn evenings... Lithuanian bread snacks! Super easy and quick!
First bake Lithuanian bread... Am joking, take any bread you have, the best is sour-dough rye one, but any other whole grain thing will do. Add garlic and salt, sprinkle with oil and fry in airfryer for up to 10 minutes. Normally they are deep fried like potatoe chips, but I don't like it so greasy... Baked in oven will also work fine, just preheat the oven to max and bake until crunchy. :) Cheers!

Scrambled tofu with wild mushrooms. This time saffron milk caps. Super yummy ones. ❤️🤤
When I was going vegan a few years ago, I had a lot of concerns about how I would manage without cheese... But suprisingly reality showed me the lack of eggs was much worse!
Apparently most of my breakies were scrambled eggs - I love to celebrate morning meals, and I love them "solid"and heavy so I wouldn't be hungry half an hour later... Also my Granny was always telling me breakfast was the most important meal of the day... So, thanks to my friends, I discovered scrambled tofu and make it very often since then.
So here come the basics for 1 person:
Take 1/3 of tofu and scramble it with fork or fingers.
Add 1 tsp of nutritional yeasts, a pinch of black salt (kala namak) and 1/3 tsp od turmeric powder. Finaly chop 1/4 of medium onion and fry it on oil or vegan ghee until brownish. Add the tofu mixture. Fry it all together - you may add some water for more eggy consistency. Enjoy! :)
I often add other veggies or mushrooms, and then I just gry them together with onion.

So the red thing is tofu with capsicium in tomato greavy, the brownish is aloo matar, potatoes with green peas.

More mushrooms! It's high wild mushrooms season, isn't it? And apparently there are plenty of woods around here, and I have 2 doggos to walk. So the result is a shroomlet! 🤪 Here we have bay boletes and suillus grevillei, which is simply a yellow slippery jack. So I fried onions with bay leaf and all spice grains on butter until golden, added mushrooms, fried until almost all water evaporated and then added kimś of a dough prepared from vegan powdered eggs mixed with water. And od course Salt and pepper! Very tasty, amazing smell and fills you up quickly after morning spent in the woods. :)

Parasol mushrooms! Fried like a schnitzel, coated in flour mixed with water (instead of flour and eggs), spices: salt, pepper, garlic and marjoram, bread crumbs and fried in canola oil. Baked jacked potatoes, spiced with herbs of Provance, garlic and salt. Yummy, but I was expecting the mushroom to have a clearer taste. ;)

Whole grain spaghetti with saffron milk cup sauce. Sooooo yummy! I found a few of them in my village, so of course I had to make something special. Cleaned them, cut into small pieces (slices 2-3 cm long), and stewed it slowly on butter, after a few minutes added onions and garlic, bay leaf, some all spice grains and a pinch of nutmeg, salt and pepper to taste. When it got soft, I added some yoghurt (for 4 milk cups 3 tbsps, quarter onion and 1 clove of garlic, 1 small bay leaf and 2 all spice grains ;) ) Mixed with aldente spaghetti and served with some nutritional yeasts on top. :)

So you take a butternut pumpkin, peel and chop into 2 cm squares. The same thing with 2 carrots, 1 parsley root and 1 potatoe, just chip them into smaller pieces. Then you chip one onion and fry it on hot oil until golden. You can use vegan ghee, will be yummier. ;) To the onion you add 3-4 cloves of garlic, 1-2 bay leaves, 2 cm ginger root (or 2 tbsp), a tsp of cumin, half tsp of curcuma, chilli as you wish, 1tsp of cinnamon, 1 tsp of kardamon and frybit with the onion. Then add veggies, fry for a few minutes, until soften, add water or vegetable broth to cover the veggies (+1-2 cm over the level of vegs, depending how dense you want to be) and also add 2-3 tbsp od vegan yoghurt. Cool until veggies are soft. Let it cool, blend. Roast pumpkin seeds to add. Salt and pepper to taste. Bon appétit! :)

But my top of the tops is Indian food. It is a real challange to make the proper Indian dish, with all its aromas and flavours. Especially when you cannot use ghee... or paneer. But I usually use oil, and tofu instead of paneer, and it works. And tastes better than it looks on the photos below 🤪🥰

Something super healthy now: salad. Vegan feta, pomegranate, lettuce and tomatoes. With sweet-sour-spicy dressing. :)
