The season of pumpkins is here again! So excited, even though I might have been born in Spring, Autumn is definitely my favorite culinary time. With the abundance of all the fruits, vegetables and the gloomy rainy days that scream: cook and enjoy! 👩🏻🍳🤪
Filled Hokkaido mini pumpkins with wild rice, onions, carrots, shiitake mushrooms, lots of sage (equally good with rosemary too) on a bed of baked potatoes and Brussels sprouts. I topped it with shaved almonds, but you can use walnuts, pine nuts, cashews (whatever floats your boat). Enjoy 😋😜!
