Kom med og introducer spiselige insekter til tusindvis af mennesker på én af de fedeste festivaler - og ikke kun for metalfans. Having seen in the media how difficult it has been to find volunteers for this years festivals, needless to say that we were worried before Roskilde Festival. For no reason. Who should have thought that we under those circumstances would end up with 27 of the most dedicated, hard working, talented and all-round brilliant people on our team💪👍🙏From 10 am to 2 am they helped us push more than 6000 cricket risottos over 4 days and create our best Roskilde Festival ever. Thanks to them all and to the thousands of people who stopped by between concerts to eat our food. We can’t wait to see you all next year 🦗🦗 (Fotos: Claus Gudum)

Festival volunteers wanted – priceless moments guaranteed! 🎸✨😁
Syngja is bringing edible insects to Roskilde Festival! At our stall, we are going to serve vegetarian risotto with optional crickets. We need you to help with sales and prep. The total volunteer effort is 24 hours during the festival days and we’ll do our best to make sure you get some nice shifts so you don’t miss your favourite band. As a reward, you’ll be granted a full festival ticket, provisioning during shifts (eating insects is not mandatory 😉) and access to volunteer camping, including free hot showers! Also, you can look forward to fun colleagues and a down-to-earth atmosphere 🦗🦗🤟🤟

Evelin, a food technology student at DTU, will be doing research on the nutritional properties and contents of various substances, which are naturally present in cascara. She also joined our last tasting session, where we’ve chosen some promising variants, that we are going to sample among possible target groups.

As a part of the sustainable solutions for the climate and the environment, we’ve been serving edible insects at our stall at Urban Sustainability Lab. We’ve certainly overcome some barriers and are so happy with the positive feedback, because this means that we’ve succeeded in our aim to prove that sustainable, insect-based food can taste great as well! 💪🙏

Cascara - the fruit surrounding the coffee bean - is truly an overlooked gem. And Morten from MØRK has got loads of it! In spite of its great taste, cascara has mostly been regarded as a wasteful by-product of cofee production - given the huge demand, cascara is simply being discarded, polluting water sources with its naturally present caffeine. In our upcycling initiative, supported by the Danish Innovation Fund, Innovationsfonden we make an effort to commercialize cascara in the form of a natural energy drink. Besides contributing to solve an environmental issue, this would also generate an extra income for the coffee farmers. It's a real win-win! Stay tuned for more updates from our journey.

We’re making progress with our cascara energy drink development in collaboration with Morten from MØRK and Jacopo from Teknologisk Institut . One prerequisite is to hit the right spot with the ratio and steeping time. During our two sampling sessions in the past few weeks we've evaluated dozens of different recipes. The results are quite promissing, but we've learned, that it's increasingly hard to take notes with huge
amounts of caffeine in your body ☕🌪️🤪
