PROVECHITO...El Cuy es un curioso y simpático animalito que es originario de las regiones andinas de América del Sur, como Perú, Bolivia, Ecuador y Colombia. El hombre andino lo domesticó hace 2 500 a 3 600 años, aproximadamente (según las evidencias), desde entonces ha acompañado a diferentes pueblos que se asentaron en los andes formando parte de su gastronomía y de sus complejos rituales. Es llamado también cuye, cobaya, cobayo, conejillo de indias o guinea pig, aunque originariamente su denominación en quechua es quwi o haka, y k'uwisu en aimara.
En Sudamérica existen 26 tipos de Cuy.
Concretamente en Perú, se pueden encontrar seis especies: Perú, Andina, Inti, Merino, Inka e in*******al o cuy sintético, que es producto del cruce de las razas mencionadas anteriormente.
En 1940 investigadores estadounidenses descubrieron que la carne de cuy contenía una enzima llamada “Asparaginasa”, la misma que actuaba sobre los tumores, deteniendo su crecimiento. Por tal razón, médicos oncólogos recomiendan el consumo de la nutritiva carne de cuy.

Mujer de 52 años con antecedente de asma y rinitis crónica. Desde hace meses presenta pérdida de peso, parestesias en miembros inferiores y tos con expectoración hemoptoica. For the first time, researchers have used the CRISPR gene editor to repair a flawed gene in the human body. In a press release, the biotechnology company Beam Therapeutics announced it had given nine patients with a lung and liver disease called alpha-1 antitrypsin (AAT) deficiency an intravenous infusion of lipid nanoparticles. These particles contained instructions that let the body’s liver cells make a version of CRISPR designed to correct a single mutated base in a gene that produces the AAT protein. In people with AAT deficiency, the uncorrected gene causes the body to produce a flawed, toxic version of the AAT protein that harms the lungs’ ability to deal with inflammation and builds up in the liver.
