🧠 Did you know… analyzing the fat in mayonnaise starts with centrifugation?
Quality control is present in every industry, and the food sector is no exception. In the case of sauces, their wide variety of compositions and styles makes it necessary to apply a preliminary treatment before centrifugation, since each sample behaves differently.

In the lab, these types of samples are usually centrifuged for different purposes:
✔️Ingredient analysis: such as fat content or water presence.
✔️Culinary development: to create new textures or presentations, like clarifying a sauce or isolating its oil phase.
✔️Quick filtration: to remove solids or impurities.

A reminder that science also hides in what we put on our plates.

El control de calidad acompaña a todas las industrias, y la alimentaria no es la excepción. En el caso de las salsas, su amplia variedad de composiciones y estilos hace necesario un tratamiento previo antes de pasar por la centrífuga ya que cada muestra se comporta de manera distinta..

En el laboratorio, este tipo de muestras suelen centrifugarse con distintos propósitos:
✔️Análisis de ingredientes: como el contenido graso o la presencia de agua.
✔️Desarrollo culinario: para crear nuevas texturas o presentaciones, como clarificar una salsa o aislar su fase oleosa.
✔️Filtrado rápido: para eliminar sólidos o impurezas.

En el Día Mundial de la Investigación contra el Cáncer queremos compartir una pequeña contribución: la donación de una centrífuga refrigerada a la sección de Oncología Experimental del CNIO.

Este equipo ya está ayudando en tareas de separación celular dentro de estudios preclínicos, acelerando procesos y mejorando la precisión de los resultados. Una herramienta que multiplica la esperanza.
