Ingredients:
- ½ cup almond flour
- 2 tablespoons coconut flour
- 1 teaspoon cinnamon
- ½ teaspoon baking powder
- 3 eggs
- ¼ cup non-dairy milk
- 1 ½ cups blueberries
- 1 teaspoon xylitol (optional)
- Coconut oil, for frying
Directions:
Blend almond flour, coconut flour, cinnamon, baking powder, eggs, and non-dairy milk until thick.
Pour the batter into a mixing bowl and stir in the blueberries.
Let it sit for 5-10 minutes. If the batter is too thick, add more milk.
Grease a non-stick pan with coconut oil and preheat until hot.
Pour ¼ cup portions of the batter onto the pan and immediately cover.
Allow the pancakes to cook for 2-3 minutes, until the edges turn golden. Flip and repeat.
Serve immediately or cool and freeze for later enjoyment.
