Comfort Food Time, y'All!.. with the arrival of low temps, hail, sleet and icy mud, let there B rainbows across our outlook and palette!
Make a good bechamel, with added porcini powder and a dash of celery salt. Halve your endives, score their central core twice and steam, cut side down and covered, in stock and a splash of white wine until almost tender.
Put two halves belly to belly and roll them in a good, country-ham slice comforter...top with your excellent béchamel and scatter a good, semi- hard cheese over the top.
Bake at 210°C until you can't stand how great it looks and smells 😋
