🌿 Herb of the week — Wild Garlic

Creamh — Allium ursinum

If you’ve walked through a damp Irish woodland in May and suddenly thought, “someone’s chopping garlic”
it’s probably this. Wild garlic arrives like a soft takeover : bright green leaves, white star flowers and that unmistakable scent hanging in the air.

It’s one of my favourite seasonal signals. You don’t need a complicated practice to connect with the land, sometimes it’s as simple as noticing what’s growing in abundance right now.

A few things I love about wild garlic:

🌿 The leaves are edible (best before flowering) beautiful chopped into eggs, butter or soup

🌿 The flowers are also edible - gentle, slightly sweet and lovely scattered over salads

🌿 It’s a brilliant early food source for pollinators in spring woodlands

🌿 In folk tradition, it’s long been associated with protection and vitality, a plant that “clears” and wakes things up after winter

If you’re foraging: go slowly, harvest lightly, and always double check: wild garlic can be confused with lily of the valley (which is poisonous). The easiest tell is the smell: crush a leaf gently and it should smell strongly of garlic.

Herb of the week — Cleavers
Garbhlus — Galium aparine
If you’ve walked through an Irish hedgerow lately and come home with something sticky on your jacket, that’s cleavers. She clings, she scrambles, she gets
everywhere. And she’s one of the most quietly powerful spring herbs we have.
Cleavers is a plant of movement. Traditionally she’s been used to support the lymphatic system, helping the body shift and clear after the stillness of winter.
— Best used fresh in spring, you can juice the young shoots or steep them cold in
water overnight
— Known as “sticky willy” or “goosegrass” in different parts of Ireland
— She’s a gentle herb, supportive rather than forceful — which I think suits the
season
— The seeds were historically roasted and used as a coffee substitute

Herb of the week — Dandelion
Caisearbhán — Taraxacum officinale
The dandelion doesn’t ask permission. She just appears: in lawns, in cracks, along
roadsides, bright and entirely unbothered. And right now in Ireland, she’s in full bloom.
We’ve been trained to see her as a w**d. But dandelion is one of the most generous plants in the hedgerow. Every part of her is useful, and she asks very
little in return.
— The root supports the liver and digestion: it’s been used in herbal medicine for hundreds of years
— The leaves are edible and deeply nutritious: bitter in the best way and great in spring salads
— Dandelion flowers are one of the first food sources for pollinators after winter
— In Irish folklore, blowing the seeds was used to tell the time — “what o’clock” was a common name for her

Herb of the week — Stinging Nettle
Neantóg — Urtica dioica

She’s back. That first brushing sting against bare ankles on a damp morning, nettle is one of the first wild plants to push through in early spring here in Ireland,
and she deserves a little celebration.

Nettle has been part of Irish land and life for centuries. She grows along ditches, hedgerows, and the edges of old buildings — anywhere the soil is rich and
undisturbed.

A few things I love about her:
— One of the most mineral-rich plants you’ll find: iron, calcium, magnesium, vitamin C
— Young spring nettles are best for eating and making tea, before they flower
— In Irish tradition, nettle soup in spring was considered a tonic, a way of waking the body up after winter
— As a plant, she improves soil health and supports over 40 species of insect

You don’t need to go far to find her. She’s probably closer than you think.
