This Chicken & Raspberry salad is the perfect easy and delicious lunch!
Ingredients:
-4 4-oz chicken breasts, boneless and skinless, raw
-4 tsp olive oil
-1 Tbsp distilled vinegar
-1 tsp Dijon mustard
-2 Tbsp chopped scallions
-¼ cup sugar-free preserves
-4 cup shredded or chopped butter lettuce
-2 cups raspberries
Directions:
Salt and pepper chicken to taste.
Coat a skillet with cooking spray and cook chicken over medium-high heat for 3-5 minutes per side or until cooked through.
In a bowl, whisk olive oil, vinegar, Dijon, scallions, and preserves.
In separate bowls, add 1 cup lettuce, 1/2 cup raspberries, 4 oz chicken, and 1 Tbsp dressing.
