🤩Harissa chicken with giant couscous🤩

A dash of North African spice brings bold flavour to this satisfying chicken dish

This recipe is taken from the Slimming World 15 Minute Heroes cookbook currently free in group when you commit to a 6 or 12 week countdown.

🤩Ingredients 🤩

⭐️1 cal cooking spray*
⭐️300g skinless and boneless chicken thighs, visible fat removed, sliced
⭐️150g dried giant couscous
⭐️250ml boiling chicken stock
⭐️½ medium red onion, thinly sliced
⭐️300g cherry tomatoes
⭐️1 tsp ground coriander
⭐️1 tbsp harissa seasoning*
⭐️1 tbsp tomato purée
⭐️2 tbsp finely chopped fresh parsley

🤩Method 🤩

⭐️Spray a large non-stick frying pan with 1 cal cooking spray and put it over a medium-high heat. Add the chicken and cook for 4-5 minutes, turning occasionally.

⭐️At the same time, put the giant couscous and stock in a saucepan over a high heat and cook for 6 minutes or until the couscous is tender.

⭐️Add the onion and cherry tomatoes to the chicken and cook for 2 minutes, then stir through the coriander, harissa seasoning and tomato purée and cook for 6 minutes, stirring occasionally. Season to taste.

⭐️Stir the giant couscous and any stock left in the saucepan through the chicken and veg, plus 1 tbsp parsley and as much boiling water as you need to loosen the mixture a little (usually around 100ml-125ml). Divide between bowls and scatter over the rest of the parsley to serve.

🤩Recipe of the Week 🤩

Festive take on this comfort food classic also has a whole heap of veg and a marvellously mustard-y Cheddar sauce!

Leftover festive ham works fabulously in this dish. Add Syns accordingly if you use our honey and mustard glazed-ham or baked ham with cherry sauce.

This recipe is taken from Slimming World’s Christmas Crackers cookbook, available to buy in group.

🧀Ingredients 🧀

⭐️300g dried macaroni
⭐️Low-calorie cooking spray
⭐️1 large pepper (red, yellow or green), deseeded and roughly chopped
⭐️2 medium leeks, sliced
⭐️200g baby spinach
⭐️250g leftover cooked lean ham, visible fat removed, torn into bite-size pieces
⭐️2 level tbsp grated fresh Parmesan

For the sauce:

⭐️500g plain quark
⭐️200ml skimmed milk
⭐️½ tsp ground nutmeg
⭐️2 level tbsp Dijon mustard
⭐️90g mature Cheddar, grated
⭐️4 level tbsp cornflour

🤩Method 🤩

⭐️Cook the macaroni according to the pack instructions (minus 1 minute), then drain and set aside.

⭐️At the same time, spray a large non-stick saucepan with low-calorie cooking spray and put it over a medium heat. Add the pepper and leeks and cook for 5 minutes or until tender, then remove from the heat and stir through the spinach. Set aside.

⭐️Preheat your oven to 200°C/fan 180°C/gas 6.

⭐️To make the sauce, put the quark, milk, nutmeg and mustard in a large non-stick saucepan over a medium heat and stir using a balloon whisk until the sauce is smooth. Season lightly and stir through the Cheddar. Mix the cornflour with 4 tbsp cold water to form a smooth paste and add to the pan. Continue stirring with the balloon whisk until the sauce has thickened and the cheese has melted.

⭐️Remove the sauce from the heat and stir in the macaroni to coat well, then fold through the veg and ham. Turn the mixture out into a 2-litre ovenproof dish, evenly scatter over the Parmesan and bake for 20-25 minutes or until golden and bubbling. Serve with salad.

Air fryer roast turkey dinner

You can enjoy turkey and all the trimmings in under an hour with this trusty time-saving gadget.

3 Swips per serving
50 minutes
Serves 2

🍗🥕🥔Ingredients 🥓🥕🥔

⭐️2 medium floury potatoes, such as Maris Piper or King Edward, cut into bite-size chunks
⭐️2 medium parsnips, cut into bite-size chunks
⭐️A few fresh rosemary sprigs or sage leaves (optional)
⭐️1 cal cooking spray*
⭐️2 lean turkey steaks, visible fat removed
⭐️2 Slimming World sausages (or use other low-fat sausages and count the Swips), thawed
⭐️½ tsp dried sage
⭐️½ tsp garlic granules
⭐️4 lean bacon medallions, visible fat removed
⭐️150g Brussels sprouts, trimmed
⭐️2 medium carrots, cut into batons
⭐️1 level tbsp chicken gravy granules
⭐️2 level tbsp cranberry sauce, to serve

🤩Method🤩

⭐️Heat your air fryer to 200°C.

⭐️Put the potatoes and parsnips in your air fryer and tuck in the rosemary sprigs or sage leaves, if using. Spray with 1 cal cooking spray and cook for 10 minutes, shaking the basket halfway.

⭐️While that’s happening, put the turkey steaks on a board, cover with cling film and bash with a rolling pin to flatten them slightly (it’s a great way to work off any pre-Christmas stress!). Squeeze the sausage meat out of the skins into a bowl, add the dried sage, garlic granules and some seasoning and mix well. Squidge half over each turkey steak and roll them up like Swiss rolls. Put the bacon medallions on another board and cover with cling film. Flatten slightly with a rolling pin, then cut each medallion in half to make 8 strips. Wrap 4 bacon strips around each turkey roll to help hold the filling in place.

⭐️Remove the basket from the air fryer, shake the potatoes and parsnips again and top with the turkey rolls. (If you have a two-drawer fryer, you could cook the potatoes and parsnips in 1 drawer and the turkey rolls in the other.) Spray the turkey rolls with 1 cal cooking spray, reduce the heat to 180°C and cook for 20-25 minutes or until cooked through, turning the turkey rolls halfway.

⭐️About 5 minutes before the turkey is ready, cook the sprouts and carrots in a saucepan of boiling water over a high heat for 6-7 minutes or until tender. Make up the gravy granules with 150ml boiling water.

⭐️Divide the turkey rolls and all the veg between plates and serve with the gravy and cranberry sauce.

TO OVEN COOK: Parboil the potatoes and parsnips first, then cook with the turkey rolls in a non-stick roasting tin at 200°C/fan 180°C/gas 6 for 30-35 minutes.

Red onion gravy

Our red onion gravy is rich and delicious. Perfect for pouring over roasts, cottage pie or bangers and mash

🤩Ingredients 🤩

⭐️Low-calorie cooking spray
⭐️2 white onions, finely chopped
⭐️3 red onions, sliced
⭐️1 garlic clove, finely chopped
⭐️1 heaped tsp tomato purée
⭐️1 tsp balsamic vinegar
⭐️1 beef stock cube

🤩Method 🤩

⭐️Spray a large non-stick pan with low-calorie cooking spray and gently fry the white onions until soft or microwave for 2 minutes on full power. Blend using a stick blender until smooth, adding a drop of water if needed. Remove from the pan and set aside.

⭐️Fry the red onions in the same pan and cook until browned.

⭐️Return the puréed white onion to the pan and add the garlic, tomato purée, balsamic vinegar, stock cube and 100ml of water. Stir well and simmer for 5 minutes, then season to taste. If you prefer a thinner gravy, just add more water.

🎄Recipe of the Week 🎄

🍫Chocolate-drizzled meringue kisses💋

Pop these light and airy bites into a gift box for a thoughtful pressie – or into your mouth for a sweet treat!

½ Syn each
1 hour 30 minutes plus 20 minutes cooling
Makes 60

🤩Ingredients 🤩

⭐️2 medium egg whites
⭐️60g caster sugar
⭐️40g dark chocolate, broken into squares
⭐️Edible lustre or glitter, to decorate (optional)

🤩Method 🤩

⭐️Preheat your oven to 120°C/fan 100°C/gas ½ and line a large baking tray with baking paper. In a large glass bowl, beat the egg whites with an electric hand whisk until they form medium-stiff peaks.

⭐️Add the sugar a spoonful at a time, whisking for 30 seconds between each addition. When all the sugar is used up and the meringue is glossy and holds its shape, stop whisking. Spoon into a piping bag fitted with a fluted nozzle, and carefully pipe 60 kisses onto the tray by squeezing down gently, then lifting the piping bag straight up. Bake for 1 hour, or until the meringues are crisp and lift easily from the paper. Turn off the oven, prop open the door and leave them inside to cool.

⭐️Put the chocolate in a heatproof bowl over a pan of gently simmering water, making sure the bowl doesn’t touch the water. Stir it occasionally, until it’s melted and glossy. (Or you could microwave the chocolate on medium for 30-second intervals.)

⭐️Using a teaspoon, evenly drizzle the chocolate over the kisses. Spray with some lustre or scatter over the glitter (if using) and leave until the chocolate has completely cooled. If you’re gifting the kisses, carefully pack them into gift boxes or bags (we recommend 10 per gift).

These kisses can be baked up to three days ahead. Keep them somewhere cool and dry until you’re ready to wrap them up and delight your loved ones!
