Hi!

I am back!!

A quick update. After a stressful divorce I was left overweight, stressed out and to top things off coping with the on-set of menopause😱😱. I have eaten healthily for years following my cancer recovery, but after my divorce and dealing with a stressful job I was piling on weight!! Everything I had previously done to lose weight, cutting back somewhat on carbs, more exercise, cutting snacks failed me. I was overweight, suffering with menopausal anxiety, struggling to sleep and feeling old! Intuitively I knew I had to adopt a different approach to address my fluctuating hormones, cut my hot sweats, lose weight and re-gain my sanity.

Thankfully I was able to do just that. I am now nearly 2 stone slimmer and have regained my energy and enthusiasm for life😊

😀Fantastic day supporting the lovely and very talented Anna Middleton (Raw Food Chef & Health Educator) at the Nutritional Healing Foundation in Manchester today!😀

If you have tried Cauliflower Rice and it was bland and boring, try this fab one Anna let us sample!! Twas lovely!!❤

100g coconut flakes or unsweetened desiccated coconut
1 head of cauliflower washed and broken into florets
100g raisins (optional)
25g sesame or coconut oil
1 to 2 spring onions, rinsed and chopped
Turmeric powder, fresh coriander chopped and ground black pepper to taste

Method

Blitz the cauliflower in your food processor until you have a good rice consistency.

Add the rest of the ingredients and pulse a couple of times until well combined.

Delicious with the raw red curry!! Yes - Anna gave us that recipe too!!👍

❤Roast Butternut Squash and Sweet Potato Soup - Thai Style!❤

If you love creamy soups with a spicy kick you'll love this winter warming soup!
Loaded with beta-carotene, this soup promotes healthy skin and hair and boosts your immune system.

The addition of coconut milk, fresh coriander and some red Thai paste transforms this soup into something quite spectacular. Ideal for anyone (like my eldest son) who won't touch these vegetables on their own!

I love this video!! People are horrified at the thought of drinking dog's milk and yet quite happily drink milk from cows which contains pus, growth hormones, antibiotics, pesticides and stress hormones (wouldn't you be stressed if you were made to produce milk for life?).

Organic plant based milks such as almond milk are much easier to digest than cows milk and create less inflammation, mucous and acidity in the body; so making the swap can really make a difference to your health, especially with conditions such as asthma, eczema, sinusitis and acne.

So many people suffer with sleep problems but are unaware that a possible cause is gut issues! ❤This l👀ks great!! ❤ However, I wouldn't recommend using olive oil to fry the 'cauliflower toasts' in. Heating olive oil above a low heat can destroy it's health giving properties; so save it for drizzling on salads and baked potatoes!! Heating oils above their smoking point can also contribute to inflammation within the body. To be on the safe side, I suggest cooking with oils that have a high smoking point such as coconut oil or ghee. Enjoy 😀

Sometimes you want something quick and tasty to eat, but not too heavy and carb laden. I don't know about you, but cold salads on a cold evening do not appeal to me!! However, adding some hot wild salmon and some steamed veg (such as carrots and sweetcorn as I used in this salad) does!! Drizzle on a homemade dressing and top with pine nuts and you have got a delicious winter salad wrapped up!! Enjoy!❤

This is how I felt after they had successfully removed my cancer. What now? How do I move forward without the constant 'cancer anxiety'?

The flax seeds provide fibre and essential fatty acid (good fat) Omega 3! The burgers are made from chickpeas which contain fibre, protein, calcium, manganese, magnesium, zinc and vitamin k - and sweetcorn which are also fibre rich and boast antioxidant carotenoids beta-carotene and lutein, as well as B vitamins, vitamin C, magnesium and potassium! L👀k at this fabulous healthy, yummy recipe I picked up for you!! My added advise would be to use RAW honey and to add it to gently melted Organic Raw Virgin Coconut Oil - to preserve the health promoting properties of these two fabulous ingredients !! Enjoy!!😘
