This is what I had for lunch today. I call it a chinese stir fry salad. I used recommendations from Dr Baileys Fast keto book to make my own recipe to go with the Mediterranean keto plan of eating. I used store cupboard ingredients such as water chestnuts and bean spouts tossed in some soya sauce and fish sauce with some brocolli cooked in microwave and a tin of tuna in olive oil. It was quick and filling and yummy. You can do it too to work towards your health goals.

This is a " must have" recipe book for 2023. Dr Bailey and Michael Mosley have encapsulated 20 years of the knowledge I have gained practicing as a Nutrition therapist in one book! It is the way of eating to maximise health and enjoyment of life in so many ways.
Over the next 6 weeks I am going to pull together the advice of TRE, daily 30 mins of exercise and expand my eating to incorporate this upto date scientific backed method of keto based diet. I will weekly check my cholesterol and blood pressure and weight and post my journey!
You can either buy their book to join me or they are giving a good priced 3 month programme online.
I promise I get nothing out of sharing this with you except the pleasure of seeing true facts helping us all live a better life for 2023!

A really healthy tasty twist to homemade hummus to maximise flavour and a cut on calories. Add 1 roasted beetroot and one grilled red pepper to half a tin of chickpeas, juice of a lemon, 1 tbsp olive oil, sauted small onion with 2 cloves of garlic, a punch of corinder and cumin powder and blitz! Wow! Great with raw carrots to really up your antioxidant power, and support your blood sugars to help with weight control. Liver cleansing and immune boosting, what more could you ask for from your fresh vegetable box!

I just had to share this easy vegan, immune boosting, filling warm salad I made up this evening. Colourfull and so full of flavour. A glass of my new found favourite drink of vegan sparkling non alcoholic Chardonnay. Really, it's is refreshing and guiltless. God thinks you are special so treat yourself special ❤️

"And now these three remain: faith, hope and love. But the greatest of these is love."

Thai Sweet potato and coconut soup.
Feed your body with immune boosting nutrients to look after the body and hope you have in life.

Ingredients:
4 large sweet potatoes
2 onions
2 carrots
1 can coconut milk
1 tbsp Swiss boullion
1 tbsp Green Thai paste
1tsp tumeric
1 litre boiling water

Saute for 5 mins the chopped sweet potatoes, onions and carrots with a tbsp olive or coconut oil. Mix in the Thai paste and tumeric then add the stock and coconut milk. Bring to boil and either pressure cook for 10 mins or simmer for 20 . Wizz with a blender and add extra water if you need to and grd pepper.

From some chicken bones make a gut friendly broth by adding water and cooking in your pressure cooker for 20 mins. Add sweetcorn, thai curry paste, coconut milk , pak choy and some prawns and you have an immune healthy soup for lunch in 30mins.
