For years, we’ve been told to fear processed meat. Ham, bacon, cured cuts - all lumped into one category.

But a new meta-analysis is now challenging that narrative and it’s well worth a few moments of our time.

Traditional dry-cured ham may not carry the same health risks as modern, fast-cured meat. And when we dig a wee bit deeper into the history of our food, it all starts to make sense.

There was a time when curing meat wasn’t an industry. It was a craft. Hams were rubbed with salt and herbs, then hung in cool air for months - sometimes years.

No chemicals. No shortcuts. Just time and some elbow grease.

Walk through parts of Spain or Italy today and you’ll still see it - rows of Iberian and Parma hams quietly ageing for 18, 20, 24 months.

Over time, the nutrient profile of that ham dramatically changes with beneficial fatty acids and natural enzymes.

The fat becomes rich in oleic acid - the same fat that makes extra virgin olive oil so powerful for the heart.

Proteins are slowly broken down by natural enzymes into smaller peptides and amino acids - making the meat easier to digest and more nutritious.

It’s not just preserved. It’s enhanced. And this is how ham was produced for thousands of years until big companies came to town.

Now compare that to what we call “ham” today. Most of it is wet-cured. Soaked in brine. Injected with nitrates, nitrites, sugars, and preservatives. Turned around in a matter of days or weeks.

Not crafted. Manufactured. Two completely different foods - wearing the same label.

But this didn’t happen by accident. To understand it, we have to look back. Back to the 17th century when the infamous East India Company rose to power.

At its peak, this wasn’t just a trading firm - it was the most powerful corporation the world had ever seen. Dominating trade routes. Controlling monarchs. Shaping nations. (Think BlackRock or Vanguard… but with an army.)

In fact, it was this very company that sabotaged Scotland’s Darien scheme resulting in the Act of Union in 1707!

To maintain its power, it needed gunpowder. And for gunpowder, it needed saltpetre — potassium nitrate. So, they produced it in vast quantities, harvested in India, and shipped across the empire.

Like many industrial byproducts throughout history, this ingredient didn’t stay in its original lane. Saltpetre soon ended up in our food chain as a faster way to cure meat and preserve food.

What once took months could now be done in a fraction of the time – saving money for big business. And just like that - time, tradition, and natural methods were replaced by speed and chemistry.

Friends who have read my book will recognise this pattern. After World War II, chemicals developed for warfare were repurposed for agriculture. The fertilisers, pesticides and plasticisers now wreaking havoc on our health today!

Centuries earlier… the same thing was happening with our meat.

Before the Act of Union in 1707, pork was almost absent from the Scottish diet. Ancient Scots emigrated from Greater Scythia where eating swine was a big no-no. That’s why our pies and bridies were made with beef, lamb, and mutton. Not cured pork.

That only became widespread later when corporations seized control of our food supply. Industrial methods made processed meat cheap, fast, and scalable and we ended up with spam on our plates.

Now, our grannies ate spam fritters, bacon butties and the likes but with one major difference. Right up until the 1980s we had far more cabbage and leafy greens on our plates – veggies loaded with vitamin C!

Vitamin C halts the formation of cancer-causing compounds that occur when we consume nitrates and nitrites. This powerful antioxidant blocks nitrosamines from forming in the gut when we eat food containing these preservatives.

Today we consume 80% less cabbage and our vitamin C intake has plummeted. Vegetable consumption has fallen to its lowest level in 50 years whilst our taste for processed food has skyrocketed!

So, when we hear that “processed meat is dangerous” we should pause and consider the facts. There’s a massive difference between slow, natural, dry-cured meats and the chemical-heavy stuff sold in supermarkets.

Is it time we got back to more vitamin C-rich veggies and traditional meat and fish on our plates?

Because when corporations change food, they don’t just change how it’s made…

They change how it affects our health.
