๐ฅฃ Butternut squash soup ๐ฅฃ
This Slimming World soup is deliciously smooth and super tasty. If youโre looking for cold-weather lunch ideas, stash a flask of this flavoursome soup.
๐คฉIngredients ๐คฉ
โญ๏ธ Low-calorie cooking spray
โญ๏ธ 1 onion, diced
โญ๏ธ 1 medium butternut squash, peeled, deseeded and cut into wedges
1 small potato, quartered
โญ๏ธ 2 garlic cloves, crushed
โญ๏ธ 900ml hot vegetable stock, suitable for vegans
โญ๏ธ Few thyme sprigs, to serve
๐คฉ Method ๐คฉ
โญ๏ธ Spray a large non-stick pan with low-calorie cooking spray and put it over a low heat. Add the onion and cook for 1-2 minutes.
โญ๏ธ Turn the heat up to medium, add the butternut squash and potato and cook for 2 minutes. Add the garlic and season lightly. Pour in the stock and simmer for 25 minutes
โญ๏ธ Using a stick blender or food processor, blend the mixture until smooth. Check the seasoning and serve hot, with the thyme sprigs scattered over.
