Danielle Butler Nutritionist As a runner nutrition plays a huge part of my training. I qualified as a nutritionist to gain expertise in this area and would now like to help others.

I have been a keen runner for many years. Last year I took on the challenge of completing my first marathon. It was during my training that I realised how important it was to get my nutrition right. This was as important as my physical training and could be the difference between me finishing well or just finishing. I decided to qualify as a Nutritionist so that I could pass my expertise onto others. Many people get the training right but fall down when it comes to nutrition. I know how much of a positive affect changing my diet has had on me and would like to help others. There are many fad diets out there at the moment which restrict certain foods from your diet. My plans are based around healthy, balanced eating. It's not a diet, it's a way of life for the individual and for families.

Made these for dinner tonight. They were absolutely delicious and so easy to prepare/cook! I added some wholemeal breadcrumbs to the salmon mix once I had pulsed it in the food processor, just to firm it up slightly, but you don't have to do this. The kids loved them too!

Superhealthy Salmon Burgers
Ingredients
• 4 boneless, skinless salmon fillets, about 550g/1lb 4oz in total, cut into chunks
• 2 tbsp Thai red curry paste
• thumb-size piece fresh root ginger, grated
• 1 tsp soy sauce
• 1 bunch coriander, half chopped, half leaves picked
• 1 tsp vegetable oil
• lemon wedges, to serve
Method
1. Tip the salmon into a food processor with the paste, ginger, soy and chopped coriander. Pulse until roughly minced. Tip out the mix and shape into 4 burgers. Heat the oil in a non-stick frying pan, then fry the burgers for 4-5 mins on each side, turning until crisp and cooked through.
2. Meanwhile, use a swivel peeler to peel strips of carrot and cucumber into a bowl. Toss with the vinegar and sugar until the sugar has dissolved, then toss through the coriander leaves. Divide the salad between 4 plates. Serve with the burgers and rice.
For the salad
• 2 carrots
• half large or 1 small cucumber
• 2 tbsp white wine vinegar
• 1 tsp golden caster sugar

A delicious and easy to prepare pasta sauce!

Amatriciana Pasta Sauce

Ingredients

2 tbsp olive oil
200g/8oz smoked bacon, chopped into small pieces
2 medium red onions, finely diced
½ tsp chilli flakes
Tin chopped tomatoes
½ tsp dried oregano
50ml red wine
Pepper

Method

• Heat the oil in a large pan on a moderate heat and add the bacon. Fry for about 5 mins, until it starts to crisp a little at the edges. Add the onions and chilli flakes. Cook for a further 10-15 mins, stirring all the time to prevent anything catching.
• Add the tinned tomatoes, wine and oregano and bring to the boil. Simmer for 5-10 mins.

Chicken and Quinoa Stir-Fry

Serves 2

Ingredients

1 tbsp coconut oil
Bunch of spring inions, finely slices
1 red pepper, de-seeded and finely diced
1 courgette, diced
2 x chicken breasts, cut into 1cm slices
4 tsp smoked paprika
Salt and pepper
225g pre-cooked quinoa (I used wholegrain rice and quinoa packet)
50g feta cheese, crumbled
Small bunch of parsley, leaves only, roughly chopped – optional
Squeeze of lemon juice

Method

• Melt the coconut oil in a wok or large frying pan over a medium to high heat. Add the spring onion, red pepper and courgette and stir-fry for 2-3 mins or until the vegetables are just starting to soften.
• Increase the heat to high and add the chicken, along with the paprika and a little salt and pepper. Fry for a further 3-4 mins or until the chicken is just cooked.
• Stir in the quinoa and fry for another few minutes, until it is warmed through.
• Serve your chicken and quinoa stir-fry topped with crumbled feta cheese, chopped parsley (if using) and a squeeze of lemon juice.
