Yesterday was such a glorious autumn day so I decided to visit High woods in Bexhill and pick a few mushrooms. I realised after a few years, not gone mushroom picking, I had become rusty in my knowledge and ended up only with a few varieties one of them was a porcini.
Mushrooms has been used in many cultures over thousands of years and has a fascinating amount of applications. From medical use, such as anti cancer, antioxidants, mood enhancers etc.
1 simple mushroom can have up to 150 enzymes.
I'm lucky to have a neighbour with more up to date experience of foraging so I had my shroomies confirmed as safe. Apparently according to Wildfoods website, mushroom poisening isn't that common in the UK, however I wold still be very causious as they wrong one could be fatal you or leave you with permanent kidney damage. There are many foraging groups out there you can join to increase your knowledge.
I made porcini pasta that evening with garlic, Italian herbs, white wine and cream, delicious :)
