Want to try this versatile fresh herb but not sure what to do with it?
Lemon Balm is most commonly used for calming tea, adding a bright zing to salads, and making natural remedies like bug sprays or cold sore treatments.

Drinks and Infusions
Simple Tea: Steep a handful of fresh, torn leaves in boiling water for 5–10 minutes.
Infused Water: Add fresh leaves and sliced lemon to a pitcher of cold water and refrigerate for several hours for a refreshing summer drink.
Lemon Balm Mojito: Use lemon balm leaves instead of mint for a citrusy twist on a classic mojito.
Simple Syrup: Boil equal parts sugar and water with a cup of leaves to create a syrup for sweetening cocktails, lemonades, or drizzling over fruit.

Culinary Uses
* Fresh Salads: Tear fresh leaves and sprinkle them over green or fruit salads to add a light, aromatic citrus flavour.
* Pesto Twist: Replace or mix basil with lemon balm, olive oil, garlic, and pine nuts to make a bright pesto for pasta.
* Compound Butter: Mix finely chopped leaves into softened butter with a bit of lemon zest. It’s excellent on roasted vegetables like corn and asparagus.
* Baking: Add minced leaves to muffin, scone, or shortcake batters for a subtle lemony fragrance.

Health and Home Remedies
* Sleep and Anxiety Aid: Known for its relaxing properties, drinking lemon balm tea before bed may help reduce stress and improve sleep quality.
* Bug Bite Relief: Crush a fresh leaf and rub it directly onto a bug bite to help soothe itching and inflammation.
* Mosquito Repellent: Rub fresh leaves on your skin to help ward off mosquitoes, as they are naturally repelled by the scent.
* Cold Sore Treatment: Infuse the leaves into oil to make a lip balm; lemon balm contains antiviral properties that can help speed up the healing of cold sores.
* Digestive Support: Consuming the tea may help relieve mild indigestion, gas, and bloating.

Pro Tip: Lemon balm is best used fresh, as it loses most of its flavor when dried. If you have an abundance, you can freeze the leaves in ice cubes to use in summer drinks later.

Our delivery from has just landed and this week we have some delicious Organic Wet Garlic!

Wet garlic is immature garlic harvested before the bulb has plumped and dried, making it milder, sweeter, and entirely edible from bulb to stem.

It lacks the sharp, spicy "bite" of dried garlic, offering a nutty, onion-like profile. It is much more aqueous than standard garlic, giving it a fresh, spring-like crunch and both the bulb and the long green stalks are delicious and usable.

Since the papery skins haven't formed yet, you can even skip the tedious peeling.

Because it is so mild, you can use much more of it than you would with regular garlic cloves. Treat it like a leek: Wash it thoroughly and slice both the bulb and the green stem.

Roasted: Cut the whole bulb in half, drizzle with oil, and roast until creamy.

Sautéed: Fry the sliced stalks in butter as a side dish, similar to spring onions.

Raw: Slice thinly into salads, salsas, or dressings for a gentle aromatic hit.

Confit: Cook slowly in oil to create spreadable cloves and flavourful garlic oil.

Finishing Touch: Add it at the very end of cooking to pasta or risotto to keep its vibrant flavour.

It's rhubarb season and the strawberries won't be far behind, if you’re making jam, you’re going to need pectin.

Certo Liquid Pectin is a natural, apple-derived liquid pectin used to ensure a reliable set for homemade jams, jellies, and marmalades. It reduces boiling time, preserving vibrant colour and fresh flavour, making it ideal for low-pectin fruits.

Made from the skins of pressed apples or citrus fruits, its the UK's only easy-to-use liquid pectin, allowing for shorter boiling times.
Its reliability ensures a consistent set for preserves, especially for low-pectin fruits like strawberries, peaches, and rhubarb.

Suitable for vegans, gluten-free, and wheat-free.

How to Use Certo
Preparation: Add to your fruit and sugar mixture when preparing jams or jellies, typically near the end of the boiling process.
Boiling: For best results, bring the fruit and sugar to a rolling boil, then stir in Certo, sometimes requiring a quick 30-second to 1-minute boil afterwards.
Dosage: A standard recommendation is half a bottle (125ml) per typical batch of jam (approx. 1kg fruit/1.4kg sugar).
Storage: Refrigerate after opening and use within 7 days.

07/04/2026

Suma Wholefoods Organic Psyllium Husk is a high-quality, plant-based supplement that stands out for its extreme fibre purity and Suma's ethical standards.

Psyllium Husk consists of approximately 96% fibre, making it a powerful tool for meeting daily fibre recommendations. A single teaspoon provides roughly 5g of fibre, about 15% of the recommended daily intake.

It is Soil Association certified organic, ensuring it is grown without synthetic pesticides or chemicals. It contains 100% psyllium husk with no added fillers or artificial ingredients.

Beyond health, Psyllium Husk acts as a critical gluten-free binder in baking. It helps dough stay together and improves the texture of gluten-free breads and pastries.

As a bulk-forming laxative, it absorbs water to form a gel-like substance that softens stools and promotes regular bowel movements. Regular intake is also linked to lower LDL ("bad") cholesterol and improved blood sugar management by slowing carbohydrate absorption after meals. By expanding in the stomach, it increases feelings of satiety (fullness), which can help reduce overall calorie intake.

Because psyllium absorbs significant amounts of liquid, you must drink plenty of water throughout the day to prevent it from causing further digestive discomfort.
