Cheers to a sparkling New Year with these low swip sparking jellies that include a cheeky dash of my absolute FAVE....prosecco ππ»ππ₯

Ingredients
πΈ7 sheets leaf gelatine
πΈ450ml diet lemonade
πΈ100ml Prosecco or sparkling white wine
πΈ1 level tbsp edible gold stars, plus a pinch to decorate
πΈPinch of edible gold glitter, to decorate
πΈ12 fresh raspberries, to decorate
What you need to do
1. Soak the gelatine in cold water for 5 minutes or until softened. Squeeze out any excess water and transfer the gelatine to a non-stick saucepan with 3 tbsp lemonade. Heat gently over a low heat (being careful not to let it boil) until the gelatine dissolves, stirring occasionally.
2. Pour into a measuring jug. Add the remaining lemonade and the Prosecco or sparkling wine, and stir gently so you donβt lose the fizz. Transfer to a 20cm square non-stick baking tin and chill for 4-6 hours or until just set.
3. To serve, roughly chop up the jelly and divide it between 4 dessert glasses, layering with 1 level tbsp edible gold stars as you go. Scatter over the extra gold stars and the glitter, and top with the raspberries to serve. These jellies look even more spectacular decorated with mini sparklers!
