All butter comes from churning cream.

Pasteurised butter is made by heating the cream to temperatures that eradicate any potential harmful bacteria. The process prolongs the shelf life of the product.

Unpasteurised butter (sometimes called raw butter) does not undergo this process. Therefore it maintains the natural enzymes and beneficial bacteria that is los in the pasteurisation process.

As a result

Unpasteurised is likely to provide higher levels of nutrients including Vitamins A, D and K2. In addition it provides a source of probiotics and active enzymes that may support digestion. Some studies suggest it may provide some more beneficial fat. Those who like unpasteurised butter will argue that the taste is richer and creamer than pasteurised butter.

However the pasteurisation process kills off any harmful pathogens that might be lurking and therefore is considered safe to consume. Anyone with a compromised or suppressed immune system should seek advice before considering consuming unpasteurised foods.

Margarine - tends to contain less saturated fat that butter. The fat content is made from vegetable oils rather than animal fat. Some are fortified with vitamins to provide some nutrient value. However all are ultra processed food products so it is always important to check the ingredients to avoid unwanted chemical additives.

Finally all butter and margarine is high in calories and fat (including saturated fat). Therefore all of us should be mindful of eating butter in low to moderate quantities.
