Making my own flatbread means that I avoid these:

1. Flour Treatment Agents
- Ascorbic acid (E300): Strengthens gluten, improves rise, and increases loaf volume.
- L-cysteine hydrochloride (E920): Reduces crust thickness and speeds up dough development.

2. Emulsifiers
- Lecithin: Enhances dough elasticity and moisture retention.
- Mono- and diglycerides: Improve crumb structure and volume.
- DATEM (Diacetyl tartaric acid esters of mono- and diglycerides): Strengthens dough and improves gas retention.

3. Preservatives
- Calcium propionate: Inhibits mould growth.
- Potassium sorbate: Prevents yeast and bacterial spoilage.
- Sodium benzoate: Extends shelf life by controlling microbial growth.
- Citric acid: Regulates acidity and acts as an antioxidant.

4. Leavening Agents
- Yeast: Traditional fermentation for rise and flavour.
- Baking soda / Baking powder: Chemical leaveners for quick-rise breads.

5. Dough Conditioners
- Improve dough handling, elasticity, and consistency. These may include enzymes, oxidising agents, and reducing agents.
